I use this for many Chinese vegetable dishes, but also Korean black bean noodle dishes (jajangmyeong) that my wife is fond of and my favorite Thai style dishes, pairing wide flat rice noodles with black bean sauce and contrasted with speed basil.
These beans produce a very savory flavor that is good on its own, but even better when contrasting it with fresh clean flavors like basil, mint, green onions, etc. This is a great purchase if you're an adventurous cook, a valuable ingredient to add to your pantry's arsenal. Chinese black vinegar, garlic, shichuan pepper, black pepper, and ginger are other ingredients commonly used in making sauces with fermented black beans.
BUYER BEWARE...the product I received was sold by TA National Trading and fulfilled by Amazon. Do not buy this product until they change vendors. This item is not worth the hassle of returning so the vendor got away with substituting a substandard product this time, but I will never buy another product sold by TA National Trading!
The bag is quite large. I hope I can use them all up someday. As for taste, they taste fine. I just needed to mash some I think.
