Product description

Chef's choice model 610 slicer is a premium gear driven food slicer. It has a reliable, smooth and powerful cool running high torque Electric motor. It is a versatile, rugged slicer which features all structural components of cast aluminum and stainless steel. The large capacity food carriage retracts fully to permit slicing of extra large roasts, hams and other foods. The precision thickness control slices from deli-thin to approximately 3/4-inch thick slices. A tilted food carriage and Cantilever design for fast and efficient slicing. The 7-inch multi-purpose stainless steel serrated blade, food carriage, food pusher, food deflector and thickness guide all remove for easy cleaning. Extra secure, the food carriage locks into position limiting access to the blade when the unit is not in use. Intermittent on/off switch, convenient cord storage. Fuse at the bottom of the slicer will trigger shut down in case of power surge. Slicer comes with a serving tray.

I bought this because of its good reviews but, unfortunately, I shouldn't have. I loved it at first. I make batches of jerky on my smoker from time to time that range from about 4-7 pounds. What I would do is freeze it until 1-2 days before I wanted to make my jerky mix, then put it in the refrigerator. After being in the fridge for a day, it makes the jerky to where it cuts extremely consistently and is plenty pliable to where you can here the machines motor is not working very hard. Unfortunately, the manufacturer decided it would be a good idea to mesh a plastic gear to a metal gear on a low speed, high torque motor. Pitiful idea really. If that gear were metal, this thing would be well worth the money and would probably last years, but now it's a paperweight because I didn't purchase a 3 or 4 year extended warranty and I've only used it a handful of times. For that quality, I wouldn't even want to go through the hassle of returning just to get the same plastic gear that will burn up. This is a high-torque slicer, specifically to cut harder cuts of meat and should've had no problem cutting what I cut. Unless they only thing you're cutting is soft lunchmeat, I can no longer recommend this product. It should be recalled and replaced with a stronger gear. Mine started squeaking a little on about my 3rd use and I just assumed it was the plastic gears rubbing against one another. On about my 5th cut, luckily as I was almost done with the meat, I heard a quick whir and know a gear had slipped or torn it's teeth off. I opened it up to see if it was an easy fix, being the mechanical head that I am, and found the drive gear totally stripped. I don't know if the factory doesn't shim them well or if it's just a totally bad design. Either way....Busted!

Pros:
Easy to clean.
Stores in a fairly small form factor.
Good for soft meats only.

Purchased Chef's Choice 610 slicer about 6 yrs ago--slice with it on average about once a month; use mostly to slice boneless ham deli style thin, brisket and a variety of vegetables--onions, tomatoes, peppers and occasionally cheese. At Thanksgiving, the slicer stopped working properly. Disassembled & found the center locating assembly (what the blade holding screw goes into) has broken into two pieces--it's made of plastic. Contacted EdgeCraft customer support, described the problem and within a week, received a new locating retainer pin at no charge. Great service EdgeCraft! Could not be happier with this purchase.
