Named after the Basque city in Spain, Bilbao, this sausage is a popular cooking sausage in Spain and the Phillipines. Perfect for paellas, callos (Spanish stews), pesang manok (Filipino chicken soup) and Pamplina (Pork and Chorizo Soup with Beans). Add smoky, garlicky flavor to scrambled eggs or baked beans.
