Aquafaba is the liquid leftover from soaking or cooking garbanzo beans. The water absorbs proteins and starches from the beans, becoming more viscous along the way. Its viscosity is similar to that of eggs and egg whites, making aquafaba the perfect egg substitute. We've blended aquafaba with our favorite oil—100% pure avocado oil—to create a 100% vegan mayo that can truly be described as plant-based. the AD PHOTOS ARE 100% MISLEADING. OIL, NOT MAYO - BUYER BEWARE!!!

DO NOT BUY!!! I read the reviews and since they were mixed, I purchased this product because it's difficult to find an egg-free, canola-free mayo. Maybe the product sold in stores is different (fresher?), but what I received was a jar of yellowish-green liquid with about an inch of something thicker sitting on the bottom. Even after shaking and refrigerating you couldn't spread this runny goop on a sandwich. Call Amazon and they will refund your purchase price. I found a similar product in Whole Foods from Primal Kitchen - now that's what I expect mayo to look like...

I liked how well packaged the product was and how the product itself was sealed. The labeling on the product is visually appealing. When I opened the jar, it had a strong vinegary smell and the consistency was liquidy. I don't mind that as long as it tastes great. I had some by itself and it was fine. It was pretty similar to regular mayo.
I used it to make a tuna salad and it worked out perfectly. I would definitely recommend to anyone who doesn't mind the vinegar smell. The only downside is that it's not as creamy as regular mayo but, it is smooth. All in all, it is a good product and I do not regret buying it.
