Admittedly, I'm no pro. I like the feel of these cookie cutters. And they fit into each other when laying out the positioning on the dough. Very little excess to deal with. BUT they are small and even though my gingerbread dough was only 1/8 thick the cookie tends to lose articulation of shape as it bakes. Maybe I just need a new recipe??
