As is the case with wood chips for smoking, I definitely recommend soaking these for a good long time. They say two hours but I soaked mine for 6 hours before grilling. I used two boards for four good-sized salmon filets and had room for some asparagus. The boards blackened on the bottom and smoked a little, which is what imparts the fabulous flavor. But I think they are definitely good for at least a couple more rounds of grilling. The flavor is wonderful and we'll definitely be putting the rest of the boards to work fixing our new favorite salmon meal.
