I've just received my copy, have read it cover-to-cover, and I love this book. I'm 70 years old, cooking is my passion, and I either own or have read hundreds and hundreds (thank you, public library) of cookbooks Among those are many classic reference cookbooks (Joy of Cooking, Gourmet, Bon Appetit), but this one beats them all in terms of size (1,062 pages), clarity (every single recipe comes with an explanation of how ATK tested various alternatives and why they came to this specific recipe), and comprehensiveness in terms of cuisines. Some chapter titles are clever ("Let's Do Takeout"), and follow through with such classics as Pad Thai. Others are, of course, the expected chicken, turkey, pork, etc. But also French, Italian, and Tex-Mex. Almost all recipes come with color photos of the completed dish. The "behind the scenes" copy consists of a few black and white photos scattered throughout. However, there are 30 pages listing equipment "favorites" (not full reviews) with my estimated average of 7 items per page--an invaluable reference, IMO. Also, there are 24 pages listing ingredient "favorites" with my estimated average 8 items per page. I was pleasantly surprised that the book includes so many equipment and ingredient recommendations. Finally, I've subscribed off and on to Cook's Illustrated, Cook's Country, have subscribed to their website, and have watched their TV shows for many years. They really mean it when they say, "we make all the mistakes so that you don't have to," and I have found their recipes invaluable over the years. I put a lot of Post-Its on the pages on my book for recipes that I want to try. Finally, for anyone who wants to improve their cooking skills, simply wants to dabble in, for example, "take-out" cuisine, OR needs more recipes for weeknight cooking, I highly recommend this book. Find a dish that interests you and then follow the step-by-step instructions you need to make your dish a success.

A very large cookbook with lots of information and solid recipes. No total fails; some have been less popular with the family than others, but I tend to go to this cookbook more often than say, Betty Crocker or something. Also, more reliable results than my Joy of Cooking cookbook. This just seems less fussy. I usually learn something every time I read through a recipe. I especially like that care is taken to list ingredients you'd actually be able to find in your grocery store or that you'd already have in your pantry. I also like that the ingredients list is not superfluous.

I am a fan of both ATK and Cook's Country TV shows; after receiving this cookbook, I realized that I probably actually wanted the Cook's Country cookbook instead. So that might be something to keep in mind ... the TV shows are really similar so it's easy to confuse where recipes came from.

I think this could be an excellent gift for someone recently engaged, first house, etc. It has recommendations for essential kitchen gear and their corresponding price points. I wish I would have had something similar when I was picking out pots, knives, etc. A lot of this stuff you only buy once, and there's some surprising suggestions peppered in.

The only thing missing from this cookbook is a ribbon bookmark. You'll want to have something to mark your place / favorite recipes in this giant tome... sort of annoying to keep looking up the same recipe in the index over and over. Other than that, no complaints!

This book is AWESOME! I love how each recipe begins with a short explanation of special techniques or ingredients that make the recipe work, explaining their process and giving you a better insight on the dish. There is a section towards the end that is like their version of consumer reports which tells you their choices for various products and cooking accouterments (all of which are available on amazon). Absolutely perfect for all skill levels, and a perfect accompaniment to classics like Joy of Cooking, Julia Child's Mastering the Art of French Cooking, or my trusty Better Homes & Gardens cookbook with it's familiar plaid cover.

Cons:
Be aware that this book is 1000+ pages. That means it is heavy and cumbersome; it's not exactly something you want to have lying around on the counter as you cook because it will be in the way...maybe you might want to consider purchasing one of those pedestals that libraries use for dictionaries. I found out that the index & table of contents are kind of wonky...be prepared to hunt a little bit for some things, but not more than a page before or after. These minor quibbles are not enough to deduct from my 5 star rating.

Wow, so many recipes, so little time! I really like the "Why This Works" section before each recipe that explains their process on making/improving the recipe to be its best. It seems a lot of the savory dishes use things like anchovies and the soups thicken with instant tapioca. Not two things I keep in stock, but there are enough other recipes to appease everyone's tastes. I received their Cooking for Two cookbook at the same time and have made many from there, but have only had the opportunity to thumb through this cookbook twice (it's really big!) and have bookmarked at least 50 recipes. There are about 200 pages of recipes I won't use, just because I don't grill out or prefer making homemade chinese, but I'm sure others will enjoy those sections. I'm very happy I bought this cookbook - I have every confidence that the recipes will turn out since they're from America's Test Kitchen.

A fascinating reference for learning why and how recipes work. For me, this cookbook is more about cooking education than about the recipes. To that end I have found it to be tremendously insightful and helpful in understanding recipies in general. The downside of the book is that they do not always use weight measures but volume in most cases which leads to inaccuracies but I suppose that is the common method used in the United States. In addition, they use more than just the basic ingredients without information on conversions, for example - self-rising flour, only quick rise yeast etc. Of course you can look on the Internet for conversion information if you are using more basic ingredients. The recipes are not necessarily laid out in an easy-to-follow path for example in making sweet potato fries the ingredients are listed all together but not in the order in which they are used. It would be better to have each step with its own set of ingredients and instructions. Never-the-less, the educational value of the cookbook is worth it and I have given a copy to several friends for that reason.

That said I would never return it because I am a huge fan of the show and do like the recipes...but when you know that you can buy it in the States for 19.99 it kind of breaks your heart. This would be a great gift to someone starting out on their own because it may be the first and last cookbook they will ever need.
