Ready made recipes - not for creative people

I have to confess, I am a bit disappointed. I've expected to gain some deeper insights about making ice cream. For laymen of course, call them "idiots", I don't care. How to dose emulsifiers like lecithin or thickeners like carrageenan in modern recipes. How to replace sugar and get a good consistency even so. Nada. "Modern" means healthy standards: Ban of HFCS and artificial, highly processed aromas as well as loads of sugar. Modern means as well freshness, making ice cream from scratch. Nothing. Dick Warren comes from industrial production: pouring all kind of syrups and prefabricated glob together, good sales in mind. I'd more prefer the healthy, artisan way. Learning about alternative basics in a variety did not happen in this book, but instead I get the well known, hundredfold repeated way with an egg-milk-sugar base. If I'd go for that, I'd prefer the HAÄGEN DASZ quality. The recipes in this book are however far below. I consider my money as lost.

This ice cream recipe book has lots of fabulous recipes for making ice cream, sorbets, frozen yogurt, and other things. My only complaint is they are mostly too big for my 1 1/2 quart Cuisinart ice cream freezer and many are difficult to down size correctly.

If you've ever been lucky enough to enjoy Four Seas Ice Cream, then this book will bring it home. Written by the owner, most of the recipes reflect the menu - and help you come awfully close to their products. The book has an amazing array of recipes for different skills - many easy ones (and even a number that naturally have no added sugar) and some more challenging. Also there is a terrific section on preping toppings -- best butterscotch recipe around!
