Packed with delicious, easy to follow recipes, "Cook in Israel" draws on the author's Jewish-Greek heritage and the Middle Eastern and Mediterranean flavors of her Tel Aviv home. Orly has been offering popular cooking classes and culinary tours of Israel since 2009. "The culinary tours are a way to introduce tourists visiting Israel, who are excited by the freshness of the vegetables and fruits here and create a way to bring visitors closer to our food," Orly explains.

Filled with 100 (mostly vegetarian) recipes, many with step-by-step photos, cooking from "Cook in Isreal" is like taking a personal class with Orly. Most of the recipes take 30 minutes or less to prepare, making them perfect for weeknight dinners. Recipes for Jewish holidays are included. A former clinical nutritionist, Orly's recipes are healthy, flavorful and easy to prepare. The recipes in the book reflect the way Orly's family cooks and eats and are inspired by her mother and grandmother, the local shuk (market) and by all the cultures that have come to Israel.

Given Orly's Greek / Sephardic heritage, it's not surprising to see many dishes with eggplant featured prominently (baba ghanoush, eggplant baladi, Turkish-style eggplant, roasted eggplant, Greek-style eggplant salad, eggplant with Bulgarian cheese, eggplant siniye, etc.). I really appreciated the many creative (and tasty) ways to use this versatile fruit (eggplant is technically a large berry).

I took Orly's class in Israel and was so happy to be one of the first to purchase her book which had just arrived in print in her home. The recipes are all very simple and most ingredients are easy to find or substitute. She uses very basic instruction to allow for the beginner or experienced cook to make alterations as needed. As the title states: Home cooking inspiration. These recipes are made to change as the cook wishes, as they are for "inspiration", however they are perfect as written. I have made nearly every recipe in the book and every one has been delicious. I am not a vegetarian but with the flavourful and healthy, filling recipes, meat is not needed. I am purchasing a second copy to give as a gift to someone who did not want to give the book back when I lent it to them. I cannot wait for Orly to come out with her second book as she has hinted.

This book is really good! I'm a stay at home mom of 3. I don't have a lot of time every day to cool but there are A LOT of recipes I've used in this book since I bought it a few weeks ago and even some repeat favorites already! Beautiful, simple, easy, healthy food!

I LOVE this cookbook! It reminds me of eating while on vacation in Israel! The recipes are nutritious, delicious and best of all they are easy to make! I would recommend this book to any vegetarian, or anyone looking for additional vegetable/grain recipes to include in their diet!

Whenever I use this cookbook I am reminded of our trip to Israel. The recipes are so fresh, colorful and vibrant. They also leave a lot of room for improvisation. Best of all, the recipes are all light, healthy and mostly vegetarian. Some of the recipes call for ingredients that are not readily available in U.S. supermarkets, but they can be found easily online or in any kosher market.

I was intrigued with this book after reading a description on Facebook. The cookbook exceeded all expectations.

I made the cabbage falafal salad was a major success on Shabbat. Next the shalshuka.

What impresses me about the book most of all is the simplicity of preparing the different dishes yet are elegant and classy when prepared.

The beginner cook to the master chef will truly enjoy this book and its recipes. The stories behind the recipes are fascinating.

Sure - buy the book from Amazon. But if you ask me, go to Tel Aviv. Take the tour. Get your autographed copy of this book. Orly and her family are fabulously friendly, warm, very real people you should meet. You will get that truly personal connection to the country we all crave when we travel. Either way, Orly has a great understanding of what it takes to make a great meal.
