I avoid most healthy cookbooks, mainly because I don't believe in dieting per se, but also because most of them are full of bland "diet foods" or recipes full of fake substitute ingredients. But Cooking Light has always earned my respect because they offer good food that's tweaked just enough to make it healthier while preserving the flavor and integrity of the original dish, and not insulting my intelligence by trying to convince me that a piece of boiled chicken and a dry, undressed salad, with a glass of chemical-sweetened diet soda on the side, make for a delicious meal.

This latest Cooking Light book does not disappoint. As the title suggests, these are recipes for dishes that most of us, if we're honest with ourselves, absolutely love - comfort food. You'll find timeless favorites ranging from chicken and dumplings and pot roast with mashed potatoes, to sweet rolls and key lime pie. And the best part is, the changes do not come from things like artificial sweeteners and unsatisfying tricks like using chicken broth to make mashed potatoes. The recipes call for real ingredients, used in sensible moderation and smaller amounts than the original recipes. Things like butter, sugar, and low and no-fat dairy products. If, like me, you prefer not to use the non-fat stuff, it's easily switched out for the reduced-fat variety, with little change in per-serving fat or calories.

The smart, sensible balance achieved by this book makes eating healthier a do-able goal, far easier than the fake ingredients and deprivation found elsewhere. Hungry girl? Nope, a satisfied woman. Highly recommended.

I tend to like Cooking Light cookbooks but this is the best by far. As a Texan I love my country fried steak, but as a constant dieter I've had to forego that pleasure. Now, it's back on my menu again. Make Country Fried Steak with Mushroom Gravy with the Buttermilk Parmesan Mashed Potatoes and life is good. Also, the Classic Meat Loaf. The recipes I have tried are great and simple and I have a long list of more to try soon. Most recipes are pictured (which is a must for me). And I can work them on all into my Weight Watchers. I love this book!

Great cookbook with delicious recipes. I have tried quite a few of these recipes so far and they all have been great. The best part is they are low calorie and low fat and sodium. Great tasting healthy food. No one knows they are eating healthy food until I tell them.

This cookbook is AMAZING! I am a healthy cookbook snob, and this one really is wonderful. Nothing is too complicated. There are no strange ingredients to buy. And I've tried over 10 recipes, all with great success!! Some of my favorites are Sausage and Cheese Breakfast Casserole, Garden Vegetable Crustless Quiche, the Breakfast Braid, Grilled Peanut Butter and Banana Sandwich, Baked Potato Soup, Three-Cheese Macaroni and Cheese, Fried Catfish with Hushpuppies, Roasted Butternut Squash and Bacon Pasta, and Sweet Potato Casserole. There are at least 20 more that I can't wait to try!

Every recipe has a picture which I love! The "5 Ways" segments where they have 5 different recipes for a common food like Mac & Cheese or French Toast are great. This is not your typical "healthy food cookbook" with obviously healthy recipes. There are no English muffin pizzas or applesauce filled muffins. These are real recipes with real ingredients that have been modified to be healthier. No one will notice the healthy substitutions you've made, so you can feel good about serving these recipes to your entire family and your friends; it's for both those interested in eating healthy and those looking for great taste.

I love Cooking Light Magazine, and this cookbook might be the best one they've ever compiled. I really can't say enough good things about this cookbook. Just do yourself a favor and buy this cookbook. Buy it for your friends. It would also be a great wedding or graduation gift for those just learning how to cook!

`Cooking Light Comfort Food' presents a way to fix traditional family favorites in a more healthful way, without losing flavor or searching for exotic substitutions. Nutritional information including calories are given as well as a list of what makes the dish light; such as using turkey sausage, fat free milk, egg substitute and reduced fat cheese. Colour pictures are given for each recipe and some recipes take 30 minutes or less and are so marked. Many of the breakfast dishes can be prepared ahead of time and then cooked later, especially handy dishes to have for company and wonderful family early morning meals.

Recipes included are; breakfast, lunch, dinner, sides and desserts. The index can be a bit confusing, some dishes are listed under the main ingredient, some under what they are, such as chili or casseroles; but with some trial and error you can find the information you need.
Most of the dishes in here will become family favorites and if you do not tell them you are cooking light, they probably will never know the difference between these and the regular fat and calorie laden recipes.

I would highly recommend the country fried steak and stroganoff but don't bother with the 3 Cheese Macaroni! It's dry as a bone and I made the mistake of doubling the recipe and bringing it to the church potluck. I've learned a valuable lesson: Don't try out new recipes when you're going to serve company or share with others.
