Our cooking test involved washing the Copper Chef in dish soap and water and drying it before use as the manual recommended. We then heated the pan on a gas range to approximately 212'F and gently poured a single raw, freshly cracked egg onto the pan surface. After the egg white was partially cooked, we agitated and tilted the pan so as to slide the egg around (like in the TV commercials), but the egg did not budge. Once the egg white was nearly cooked we tilted the pan at greater and greater angles to see if the egg would slide, but it would not. After exceeding a 45' angle, the egg yolk pulled heavily on the cooked egg white until finally the lower side of the egg rolled underneath while the high side of the egg white slowly peeled away from the pan and the egg had completely turned over (without flipping). After allowing a short time for the yolk side to cook (over easy), we again tilted the pan to remove the egg. Our pan was tilted almost vertical before the egg finally dislodged and plopped onto the plate (amazingly without breaking the yolk) The egg left no visible residue on the pan and was cooked totally oil free, but in retrospect, co-coordination of multiple eggs seems too complex, so in the future I believe we will use a small amount of oil or water. As we are just beginning to use our new pan, we can not judge it's longevity which I suppose was our our main motivation for trying one, so best if you refer to other longer term reviews for that information. The vented glass cover is a nice touch!
Update: We tried cooking two poached eggs in about 1/2" of water today, and when cooked, eggs were so firmly adhered to the bottom of the pan that they had to be scraped off using a Teflon spatula. After removal, there was a lot or residue left on the pan surface which could not be removed with a paper towel and resisted removal with soap, water and a plastic dish brush. Removal was easily accomplished using a plastic scrub pad, but this is no better than a stainless steel pan. Note: Our Copper Chef pan is still in pristine condition with no surface scratches, having only been used maybe sis or seven times. Very disappointing!
On the upside, I have managed to cook popcorn completely oil free with the Copper Chef and cleanup was readily accomplished using paper towels only. (I've never actually tried this with stainless steel, but may update you in the near future regarding)
I went the full route... Square 4 piece deep fryer, 9.5" square fry pan, and 2 10" round fry pans...
Cleanup is incredibly easy. Glass lids allow for viewing and fit very well. Nothing I have found sticks to these, and I tried by burning cheese in them... This proved that I can now cook!!!
The handle feels a little cheap, and the utensils that come with the product are throw aways
I love them. I have the deep square pan and the 2" deep square pan as well. The square pan was great for about 2 weeks then developed some areas where the coating had come off! If I use it now I have to avoid those patches. I really would like another one. Can you tell me how to send this one back?
