Katz offers city and country dwellers alike an entertaining and useful guide for handling, preparing and storing food. The volume is organized by alphabetical entries such as herb seeds, jam and jelly, lard and other fats, milk, pork and quinces. In a friendly and encouraging manner, food writer Katz discusses topics as diverse as freezing vegetables, grinding grains and protecting them from insect damage, handling seaweed, peeling hard-boiled eggs, killing and skinning lambs and sheep, drying tomatoes, clarifying soup stock and making fresh cheese. Formal recipes, which comprise the smaller part of the text, also demonstrate variety: goose liver pilaf, grape catsup, persimmon pudding, Finnish rutabaga pudding, watercress soup and scrapple. The focus is on usefulness and nutrition; for example, the "cookie" entry offers only five recipes and they are more healthful than exuberant. Certain cursory sections, notably "wine" and "wild foods," are appropriate as introductions only. Illustrated.

This is a wonderful book. Katz, Countryside magazine's food columnist, has produced a unique compendium of information on food preparation and ingredients of all types. The format is encyclopedic, the material widely varied. Each sectione.g., Feet, Figs, Fish, Food Coloring, Freezing Foods, Frogs, and Fruitsincludes recipes, "food ideas," and detailed discussions of preparation, handling, and storage. The Fish section, for example, describes cleaning, freezing, pickling, salting, and cooking fish; the fish recipes are Chinese, Jewish, Elizabethan, Finnish, Portuguese, and American in inspiration. OK, this is not your typical recipe book. I think every craft of early settlers who knew how to live off the land is covered in this book.

It tells you how to dress out critters of all kinds and some you would never think of eating.

I think this would be a must for people who think like survivalist.

The index is truly like an encyclopedia. You can learn how to use part of a pig but the "Oink." Chitlins? You bet!

I read this book for entertainment. I grew up on my grandparents farm so may like this stuff better than most folks.

This book has everything you can imagine and more. I knew it would have some good recipes, but
the knowledge of what this book contains is fantastic. Everything from canning to Herbed scrambled eggs. I bought a used one, and it is just fine.
Some examples in the book:
How to skin a fish, fresh cheese making, fruit sherbet, extracting honey, handling rice, making sauerkraut, making pectin, handling fruit, steam cooking and many, many more things. Over 1000 recipes.

Then you’ll love it. I eat brains for breakfast and this book helped make that more delicious.

I fell in love with this cook book years ago and recently bought it for my brother-in-law. Great for the cook who grows their own produce or raises animals for meat.

Found this book in a charity shop. Very cheap. Find it hard to undestand how anyone could have parted with it. I grow most of my own food and experience the usual gluts. This book is my go-to for solutions. It has many excellent multiple recipes for any ingredient and also how to preserve for future use. If you ever see it for sale, buy it and cherish it.
