I am not sorry I purchased this skillet. I have an old stove with electric elements, and am used to turning the element on low, and letting my skillets heat up. I did the same thing with "Flame", tossed in half a pat of butter, and then a couple of eggs. They cooked beautifully and slid off the bottom of the skillet when I turned them over, without breaking apart (a rare occurrence), and produced the tenderest fried eggs I've ever eaten. I'm looking forward to making sauces, and cooking in this skillet - clearly we get along together! There is something about the quality of the food that comes out of this pan that is a step above, and borderline magical.
Similarities to my old cast-iron: they both contain the same volume of water.
Differences: (1) the handle of my old cast-iron often stayed cool to the touch with simple sauteing, and the Le Creuset handles can get hot, so have potholders handy; (2) Le Creuset has a handy grab hold on the opposite end -- good to have since it is 3/4 oz. heavier than my old cast-iron skillet; (3) Le Creuset is enameled; after reading the pamphlet I'm buying some teflon whisks and keeping metal implements away from this pan.
Do I recommend this pan? Yes, with one reservation. If you are not used to skillet cooking: frying, sauteing, making sauces, browning, etc. I recommend perfecting the art using a cast-iron or standard frying pan until you get basic cooking under your belt. This is an expensive skillet, and deserves to be treated with respect. Also, read the booklet that comes with this skillet; it has a lot of good advice on how to use it.
### Design and Aesthetics
The skillet is undeniably beautiful. The Flame color is vibrant and adds a pop of color to my kitchen. The enamel finish is smooth and attractive, making it a piece I’m proud to leave out on display. The iron handle is solid and provides a secure grip, though it gets very hot during cooking, necessitating the use of a pot holder or towel.
### Performance
In terms of performance, the skillet heats evenly and retains heat exceptionally well, which is expected from a high-quality cast iron pan. It excels at searing and browning, producing a lovely crust on meats and vegetables. However, I noticed that the non-stick properties of the enamel are not as effective as I had hoped. Even with proper seasoning and oiling, food tends to stick, making clean-up more difficult than anticipated.
### Versatility
The skillet is versatile and can be used on various heat sources, including the stovetop, oven, and even on the grill. This flexibility is a definite plus, allowing for a range of cooking techniques. However, its relatively small size (9 inches) limits its capacity. For larger families or those who enjoy batch cooking, this skillet might feel too cramped.
### Weight and Handling
One of the major drawbacks is the weight. At over 4 pounds, it’s quite heavy for a skillet of this size. This makes it cumbersome to handle, especially when trying to pour out sauces or transfer food to a plate. The handle, while sturdy, doesn't offset the awkwardness of the weight distribution, which can be challenging for those with weaker wrists or arthritis.
### Maintenance
Maintenance is another area where this skillet falls short. Despite following the care instructions diligently, I’ve noticed some staining on the enamel. Additionally, the skillet requires careful handling to avoid chipping the enamel coating. It’s not dishwasher safe, which adds to the maintenance burden, especially given how food tends to stick to it.
### Price
The biggest concern is the price. The Le Creuset skillet is a significant investment, and for the price, I expected near-perfection. Unfortunately, the combination of food sticking, heavy weight, and maintenance issues makes it hard to justify the cost. There are other cast iron skillets on the market that perform similarly at a fraction of the price.
### Conclusion
While the Le Creuset Enameled Cast Iron Skillet has its merits, such as even heating and aesthetic appeal, several factors detract from its overall value. The issues with sticking, weight, maintenance, and price make it less appealing than initially anticipated. For those who prioritize performance and ease of use over brand prestige, there might be better options available.
If you’re a dedicated Le Creuset fan or looking for a statement piece for your kitchen, this skillet might still be worth considering. However, for everyday practicality and value, it falls short of expectations.
