These pans have the aluminum 'plate' fused to the bottom, which means they won't warp in normal service. Pans that are stamped metal with no 'backing plate' on the bottom buckle and warp when heated; on our electric cook-top this reduces the contact area and wastes energy, plus produces hot spots in the pan.
These Cuisinart pans sit flat on the cooktop and heat quickly. They are highly polished and per the instructions we don't use metal scouring pads anywhere except the aluminum bottom; we use the plastic scrubbers on the inside and outside to prevent scratching. We bought these pans in different sizes and use them regularly. They are great.
