I really like cooking on enamel iron pans because of durability, ease of cleaning, and not having to worry about the chemicals in non-stick pans. But to prevent sticking, one should use lower flames than one might be used to with other kinds of pans. Iron retains heat and gets hotter than other types of pans, which causes burning and sticking. And one must coat with oil after heating and before putting the food in the pan.
Shape - The Cuisinart bottom is perfectly flat, whereas the center of the Lodge pan is slightly raised (imagine a dome that has been almost completely flattened, but is not perfectly flat). Consequently, the Cuisinart is better than the Lodge for cooking omelettes because eggs gravitate to the perimeter of the Lodge and might not cook evenly.
Shape - The Cuisinart bottom intersects the wall of the pan at an angle. The same is true for the Lodge. In contrast, the Le Creuset bottom rises gradually upwards to form the wall, so food won't get caught at the edge of the Le Creuset. Depending on your cooking technique, you might prefer one shape over the other.
Weight-wise, the Cuisinart and Le Creuset are manageable, and the Lodge is very heavy (it is a workout to wash and dry).
Durability - the enamel is chipping on the handle of the Lodge, but not on the cooking surfaces, where it matters most. So it's unsightly, but it does not affect functionality. There is no chipping with the other pans.
Price - the Cuisinart and the Lodge were each about a third the price of the Le Creuset.
Recently, I needed an oval shaped Dutch oven for fish recipes and discovered the Cuisinart enameled cast iron 5 ½-Qt. oval casserole (Dutch Oven) at a price less than ⅓ of a similar "Le Creuset". Its size exactly fit my needs (Inside dimensions are 11 1/2" by 9 1/8" by 4 1/8" deep).
After a few meals followed by rounds in the dishwasher, I decided to write this review.
Well made, sturdy and does not chip easily.
Even heat distribution; will not burn/scald food with proper use.
Can be used on stove top with gas/flame, electric coils or Induction.
Oven safe, up to 500 Fahrenheit, including the knob on the lid.
Easy to clean with dish soap and warm water (Recommended) - no matter the residual.
Dishwasher safe. (however some reviewers reported dullness of exterior and color bleed after using a dishwasher).
Exact fit of the lid, seals perfectly - will not splatter.
Great price. Excellent value.
Very heavy - 13.4lbs. May be a problem for some individuals.
Best use is for big meals; air trapped in empty space may dry food.
Interior white baked enamel may show discoloration after use - use lemon juice with baking soda and scrub gently for best results.
Poor customer service - see 1 and 2 star reviews.
For best results, do not use higher than medium heat on stove. (Cast iron heats slower than aluminum/steel but is much more efficient at trapping heat).
Always use wooden or heat-resistant plastic utensils. (Avoid metal, it scratches the enamel).
Never place pot on hot charcoals, it will crack (because of very high heat).
I recommend "seasoning" the exposed cast iron on the rim of the cover and the pot itself - rub the edges with oil and put it in a 350 degree oven for about an hour and let it cool off before using it.
I plan to use my Dutch oven to make yogurt and no-knead bread in the near future. Highly recommended.
