Cleaning your Stick Blender is easy! To simplify cleaning, rinse the prep bowl, cover and blade immediately after use, so that food won't dry onto them. The blending shaft, whisk head, chopper/grinder bowl and mixing cup are dishwasher safe. Everything else wipes clean with a damp cloth.
Use the whisk attachment for beating heavy cream or egg whites. It may also be used for any task that you would normally whisk by hand, like crepe batters or eggs for omelets. For best results when beating heavy cream, use a chilled bowl and chill the whisk attachment.
The Cuisinart Smart Stick Hand Blender chopper/grinder attachment is equipped with a reversible blade. This blade is sharp on one side and blunt on the other. The blade is attached to a plastic ring which slides over the blade assembly shaft, so it can be easily turned over to select the appropriate blade.
Blending & Mixing
The specially designed blade is for mixing and stirring all kinds of foods, including salad dressings, powdered drink products, and sauces. It is ideal for combining dry ingredients, and can be used to emulsify mayonnaise, too. This blade mixes and stirs while adding only a minimum of air to your mixture. A gentle up-and-down motion is all you need to make the most flavorful, full-bodied liquid recipes. But THE WORST THING about this "new improved" unit is that they decided to include a safety switch. Which I think is okay, but they put it right on the top. Where you can't reach it. So how do you hang on to the mixing cup to pulse your mayo while also trying to work the safety button? See the picture. Often you need to pulse to get the right consistency, and to keep everything mixing well. This is a stupid "improvement". If they would have put the safety button on the side, where you can easily thumb it, it would have been okay. But as it stands I can't use it. I think I'm going to box it up and send it back.
The 'new' version (which interestingly, has same model number as the one I originally purchased - CSB-79) has a safety button on top of the stick. Why a safety is necessary on a stick blender is unclear to me but in any case, this means that it is nearly impossible to use stick with a single hand. With my prior version, it was possible to blend while moving/tilting container so that blender reached all contents. I've seen comments that indicate that safety doesn't need to be held continuously - only when starting. Really??? One of the great advantages of the stick blender is the ability to pulse in a stop/start manner. I wrote to Cuisinart to see if it was possible to disconnect the safety on this appliance and their answer was 'no'. So, for now, I've duck taped a flat square (I used cardboard but a coin would probably be better) to keep safety depressed. Looks stupid but, for now, it will suffice until I can find a reasonable replacement! (BTW, product has the same plastic gears as original, so real problem with this model has not been solved!!)
The chopper will handle small amounts of herbs such as parsley or rosemary, and easily chop half an onion or some garlic. This means that if you don't have a small bowl attachment for your food processor (or don't have a food processor) you still can do small chopping tasks that are messy on a cutting board.
The whisk allows you to beat egg whites to stiff peaks, necessary for meringues or cakes. As long as your bowl is clean of grease, it is short work to make up perfectly whipped egg whites and a lot easier on the wrist than the traditional way of using a balloon whisk and beating by hand. If I am making a batch of waffles that uses one egg, I separate the egg and whisk up the egg white separately, then fold it in at the end of making the batter. This makes those very light and crisp waffles in a Belgian waffler, and it's the secret to getting very light GLUTEN-FREE waffles. (The gluten free flour mixes can tend to be heavy.)
The stick itself is well-designed. A button on the unit releases the bottom half for cleaning. This will let you do a thorough job without immersing the electrical (upper) part where the motor resides. So if you have something particularly sticky that needs a soak, you can easily do that with the bottom blade portion. Removing the lower portion also lets you attach whisk or insert into the chopper unit.
A beaker also comes with the Smart Stick, for beating up smoothies or other liquids.
The housing around the blade is metal. I've had units in past that had plastic housing, and eventually, if you drop them or they just get very old, the housing cracks. That won't happen with the metal.
The unit has a low and high speed.
Summary: this is a really good stick blender, with all the right notes. If you like to puree your soups, chop nuts, make pesto, and beat egg whites, this unit will do it all.
