This pan has done an excellent job browning several varieties of meat. 3 pounds of meat? - no problem! Pan conducts heat extremely well. It takes some practice to avoid sticking/burning, but I'm getting better with each use. Just keep in mind that high heat will scorch food instantly, and may destroy the pan over time. Not meant for high-heat applications, like shallow-fat frying or steak searing. Also, forget about frying eggs. Choose another tool for those jobs.
Very well-built, with thick steel and massive rivets. The lid fits tightly (great for slow-cooking), and the huge lid handle keeps your man-size fingers from getting burned. Main handle remains cool after several hours on the cooktop. It's a heavy pan, but the assist handle makes it manageable. I looked at All-Clad and others, and I'm laughing all the way to the bank. With care, this item should last long enough to pass down. Imagine paying 200+ bucks for a similar pan?
I cook on a gas range, and while this pan is large (much larger than the burner), it evenly distributes the heat. It easily allows me to cook a one-pan dinner for 10 adults.
This will also make a great chicken fryer, and it can even be used in the oven.
The helper handle is an absolute necessity. The pan is heavy when it is empty; full, it would be unmanageable without it.
I suspect I will never need to buy another large pan of this type, and I am sure my children (and grandchildren) will be using it for generations to come.
The major issue I had with the set, is that it did not include a larger sauce pan. Now I have this pan and my set is complete. With a family of 7, we needed a larger pan for preparing dinner. Our old nonstick cast aluminum set had a pan this size and we missed it in the interim.
These pans are great for most cooking. Because they are stainless you can use metal utensils and scrubbers without an issue. They clean up nicely each time, though with a little more effort than a new nonstick pan (old nonstick never gets clean). With the exception of frying or other high heat cooking methods, these pans cleanup almost effortlessly. For daily cooking of eggs and such I have to use far too much oil in them to make it reasonable, and so have added some ceramic coated skillets to the mix for those needs.
These pans are not typical junk cookware that is so common today. The walls of this cookware set are thick and sturdy. The pans heat evenly and quickly. The lids are well made and handles well attached. The quality stands easily up against the Calphalon and and other quality pans that I have owned. They are much better than the grocery store brands and TFal that I have also owned.
I do not regret saving some money and choosing these over All-Clad, which was the other option I was considering at the time.
