“Giving up gluten doesn’t mean giving up on the foods you’ve always loved.” – Thomas Keller

Cup4Cup’s story began in 2010 at Thomas Keller’s lauded restaurant, The French Laundry. It was here that Chefs developed a gluten-free Cornet of Salmon Tartare in response to diners who didn’t want to miss out on this menu highlight. The gluten-free cornet tasted just like the original recipe. This culinary creation was a turning point.

The result of the kitchen experiment yielded Cup4Cup—the 1:1 gluten-free flour that eliminated complicated conversions and delivered premium taste, texture and performance. Just as its name suggests, Cup4Cup replaces traditional all-purpose flour or whole wheat flour in any recipe, cup-for-cup and gram-for-gram.

Cup4Cup also provides easy-to-use baking mixes that deliver the same consistency and texture of regular flour. Customers can utilize our library of sweet and savory recipes developed by chefs for the growing gluten-free community, their friends and families.

Since going gluten free over 3.5 years ago, I have struggled with finding a flour mix to bake with that didn't leave an after taste in the baked goods or had poor consistency. I read an article online that mentioned Cup4Cup and decided to try it, even though it is quite pricey. I was not disappointed. This flour mixture virtually ensures you can bake or cook gluten free and have it taste like the "real" thing. Before going gluten free, I was known as the Queen of Gravies and I remember the first time I made gravy with a gluten free flour mix and I cried as the gravy was a horrible gelatinous mass that was simply not edible. Cup4cup changed that as well - I now have re-emerged as the Queen of Gravies and Sauces and no one can tell the difference. Sauces and gravies come out smooth and have no flunky taste and they hold over well as leftovers too. With this flour mix, you can follow any recipe you see in a book or online and you do not need to add extra ingredients such as xanthan gum. You can cook, bake and follow recipes the same as anyone else and not feel like you are being left out of things being gluten free. I know the price is expensive and it has not come down in the 2.5 years since I started using it, but it really is worth it for the quality and versatility. The only downside is that the company does not recommend using it for yeast bread baking. I would agree. I have tried it with yeast bread recipes in my never ending pursuit to find a decent bread like the breads I used to enjoy, and although it doesn't ruin a recipe, it will not make your yeast breads turn out any better as if you were using wheat flour.

I had this substituted in a grocery order when my usual gf flour wasn't available. It really shines in cookies and brownies especially when made egg and dairy free as well. It gave them a chewy texture I haven't been able to get with other flours which I attribute to the flaxseed. Of course my grocery store no longer sells it so I got it on Amazon. It seems pricey but it makes a big difference.

I've used lots of GF flours and this one is the best I've found for baked goods. The first time I used it I could see and feel a difference. It seems to be more finely milled, making it lighter and softer than I expected. It bakes up fluffy cakes and muffins and flakey pastries. It contains it's own binding agent, so there's no guesswork involved. It isn't going to work for (yeast) bread making as it has no Gluten, but it does make nice light quick breads and pancakes/waffles. I still use panko for breading, but it works well in batters for fried foods and for thickening sauces and gravies. This is my go-to all purpose GF flour.

I have been baking the last month b/c my daughter started being intolerant to gluten and just couldn't get the texture right. The taste was ok but most things just end up kind of falling apart. I baked my first bread last night with cup for cup and you would never know. The bread is delicious and the texture is perfect. I might even like it better than our regular bread we have been eating till now. It's a little on the pricey side but you get what you pay for and in this case it's worth every penny.

Have tried a few GF flours, this Cup 4 Cup works the best. The Cup 4 Cup web site has a great biscuit recipe that we now use instead of buying the premix. Along with buy a case 6 bag we save even more $ by not buying any premixes.

The price. It is soo expensive. Costs 14.99 per bag and so a loaf of bread costs £5 for the flour.
However the results are worth it as we can eat gf scones, bread loaves( make toast!) bread buns, Naans,
Focaccia, biscuits, pizza base that are as good as the non gf ones I make.
Life saver. Everyone can eat the “same” meals with enjoyment.
