Don't expect these knives to make your food pretty or smooth. They aren't meant for that. My daughter loves to chop anything and wishes they worked more easily for carrots and potatoes! These are best used for cutting tomatoes, crunchy lettuce, zucchini, cucumber, and other semi soft things that you would use a serrated knife on. Not a chopping knife.
If your child wants to chop, I suggest letting them help dice. I cut a potato, or other hard vegetable into strips and then have my daughter chop into pieces. (Potatoes, jicama, or even cheese.)
I see some other reviews complaining that they don't cut well through some things...like tomatoes, carrots, etc. These folks need to realize that these knives are not for budding young chefs to jump in and be able to prep anything you throw at them. If that were the case, we wouldn't need sharp metal and ceramic blades to do these things ourselves.
No, these kinds of knives exist so kids can get involved in the cooking process with adult guidance, assistance and supervision. I bought them for my seven-year-old niece and she had a ball making a fruit salad. She cut strawberries, bananas and apples with them. I had to cut the apples around the core and make planks for her, then she diced them. I did the same with potatoes as I had done with the apples for making potatoes au gratin and she helped me cut the slices.
