This DMT diamond rod fills a niche between a sharpening steel (for daily edge realignment) and a whetstone (for wholesale metal removal to recreate the edge). It's easy to hold properly, takes off a little bit of metal on each stroke so it's easy to control, and you use it dry so it's not messy. This tool is relatively inexpensive and solidly made in USA. I've used mine on about 10 knives (12' of edge) and it shows no sign of diamond loss, so I'm hopeful it'll last a good while.

The 600 grit version creates an edge that I find to be too coarse, even after touching up with a sharpening steel. If you like your edges smooth and sharp (like a razor) rather than micro-jaggy (like a very fine breadknife), you'll need a fine stone to finish or might consider the 1200 grit version instead.

I bought this with the Fine grit steel for my kitchen knives, as much because I didn't know for sure what the actual grit was. As it turns out, they go really well together; the Fine is good for a knife that has started to feel a little dull or catch, and the extra fine is perfect for when you're getting ready to start cooking and the knife is sharp, but needs that extra polish before you get busy. In use, say, I'd pick the fine for when I'd been chopping a lot of vegetables and gotten a couple of places where the edge was getting flat; the extra fine would be for when I had cut a lot of meat and the edge was just off a bit.

The tools themselves are hefty and large enough that you can easily maintain a consistent edge angle if you hold it freehand. On the other hand, they come with safety caps on the ends, but under the cap is a point for those who ground the steel vertically on the block and stroke down. I don't know yet about how well they'll wear, but since they're diamond steel I hope they won't have the wear that people have reported with ceramics. At this point I'd buy again.

The only caveat I'd place is the obvious one-- these don't replace stones. If you have lower quality or heavily worn knives, you still need stones to put an edge on. You probably could do it with these if you had lots of time on your hands, but this isn't the right tool for that. It also may be worth noting I'm using these with Henckels knives-- they might give different results with different alloys from another maker.

[One month later] With some time passed, I am satisfied still with these steels. My habit is to give ten or twenty strokes to each side with the extra fine when I'm getting ready to use a knife.

I purchased this DMT item due to my satisfaction with previously purchased DMT diamond sharpening stones. Initially I tested this steel on a fairly dull knife and was surprised to see that the DMT steel had achieved very little after six passes on each side. I checked the surface of the DMT steel with a white kleenex and found very little metal removal. I then tried twelve passes on the same knife and the edge was now mostly restored. After playing around with several knives I discovered that this DMT steel removes very little metal with each pass and is excellent at restoring an acute edge to well maintained sharp knives. For dull blades or for knives in need of initial sharpening, this DMT steel is too slow and probably an inefficient tool for the job.

No offense, but if you are experienced in creating and maintaining a sharp cutting edge, you don't need this review. Just buy it!

If not, here is what you need to know. This tool doesn't sharpen, it hones. And if you hone your knives regularly, you may never, or rarely, need to sharpen them.

Sharpening is the process of creating a new cutting edge; honing refines or restores that edge. In my opinion the steel and diamond tools are sharpening tools and not very good ones. Graduated sharpening stones, or a professional, do a much better job.

I have a set of Katana knives which is over five years old and, with one exception, have never been sharpened, but are all razor sharp. They are honed regularly with a DMT ceramic rod. (The one exception arose as a result of some ill-advised hacking at a unseen bone, which produced large nicks.)

Try this. Take an ordinary butter knife and hold it facing away from you so that a light source will reflect off the blade. (I use the light in a range hood.) As you rotate the knife so that the light reflects off the edge you will see a broad band of reflected light. Dull knife, no cutting edge.

Now do the same thing with your sharpest knife. If it is sharp, you will not be able to see the edge. If you see localized bright spots, it needs to be honed, and this tool is what I would use. If it has large nicks, or it looks like the butter knife, it needs sharpening. Here, a diamond rod may work if nicks are not too large, but it feels to me like a crude way to do something which should be rather precise.

I chose this product primarily for the 12" length, which is helpful for longer knives. After several years of use and occasional cleaning to remove steel dust I am still very happy with its performance.
