Not as in-depth as "Good Calories-Bad Calories"

Good information, well-written if you are exploring the possibility of a gluten sensitivity. You might want this as an intro to the gluten question. "Good Calories-Bad Calories" (Gary Taubes) is what you might term a "scientific tome" that you have to slog through. For further information I'd suggest "Why We Get Fat: And What to Do About It" by Gary Taubes. If price is a problem, "Dangerous Grains" is a good place to start.
