When I traveled to another country last summer, I gave the DCL dried yeast a try when I wanted to make beignets (type of doughnuts). I cannot emphasize how excellent this dry yeast is. I loved it so much that I bought a couple to return home with. When I ran out, I went ahead and ordered from Amazon.
I have yet to find a (supermarket) dried yeast that compares to this one. When you open the bottle, the smell of yeast is potent. You can even "taste" it when mixed in the dough. If you don't like the smell/taste of yeast, move on. It turns out that I do. Moreover, it works beautifully in the dough. With it, my dough has expanded more than with the other yeast that I've used. The grains are not as minuscule as some other brands, so you really should dissolve it with warm water before using, otherwise you get these big pieces in there that you have to break with your fingers (extra work that can be easily avoided).
My only complaint might be more for the seller. I bought the pack of 9 tins and I received them on Jan 15, 2020. I was excited to have found it in such big quantity, BUT they all expire May 25, 2020! The ones I brought back from my trip last summer 2019 had a 2021 expiration date. I was hoping it would be the case with this batch seeing that it came in HUGE quantity (I bake/cook for my family, not a business, so the yeast lasts me a while). I took a star off because of that as I would hate to spend this much money on yeast and end up having to rush to use it up, when the goal was to have it around for 1 year or two.
So, excellent product, but keep the expiration date in mind when ordering. Hopefully, you don't get a batch that expires within a month or two of purchase... I'm glad I didn't purchase more than I did. I will have to freeze some of it. Ugh.
Update August 2021: Yup, that pack of 9 lasted this long! I finished the last tin this month. They freeze very well, and worked just as beautifully even past the expiration date: just make sure you throw them in the freezer as soon as they land on your lap. This will keep the yeast fresh.
After opening, I stored the rest of the yeast in the fridge (in its original tin). I always activated my yeast before using and EVERY TIME, it bubbled and smelled like wheat. So, if anything, remember this: freeze your yeast, ESPECIALLY if it's great quality and costly. You don't want to waste all of that good stuff.
I see that the seller (Zorba Online) has doubled the price since I bought it last. When I purchased it, it was 27.64 dollars and FREE shipping. I was lucky enough to receive quite a few from a family member abroad. I wouldn't have paid $54 for it PLUS $11 shipping... No sir, No ma'am.
