Nowadays, the little village of Cetara, where the colatura is made, is well-known among the greatest chefs all over the world. We tried this tasty condiment with a simple farro and anchovy soup.

imparts an exquisite taste to all things worth eating. I consider myself a food snob, especially when it comes to salt and fish sauce. I rank this up there with Red Boat fish sauce 50N. Not that one is better than the other, just different; they're made with regional sea salt, which will have differing minerals composition

This sauce is excellent and has a similar, but different, flavor profile from Asian fish sauce. It tastes far more refined than Asian fish sauces. It's expensive, but a little goes a long way. When I make pasta for myself I hate opening a can of anchovies because a whole can is too much and leftover canned anchovies don't keep well. A tablespoon or two of this on pasta boiled with dehydrated garlic slices in a saute pan (not a cauldron) makes a fast and delicious quick comfort meal. Just be aware that this is very salty, so go easy on the pasta cooking salt.

My first impression is that this is very salty. While it does not smell or taste as fishy as some fish sauce, I find that it is less flavorful. The sauce tastes more of salt than fish, perhaps due to a shorter fermentation period. I tasted the Red Boat 40°N for comparison immediately after and found the taste of Red Boat to be superior: more flavorful, less salty. I would liken Red Boat to a smooth, full bodied wine vs. this anchovy extract to an astringent light wine. I must say the color and clarity is better than Red Boat, but it falls short on taste which is more important to me. Minus one star each for sharp saltiness, lack of flavor, and price.
