Review
We've all heard the mantra You are What you eat. But Carrie Vitt took the phrase to heart when debilitating headaches spurred her to examine its underlying truth. What she discovered -- that the quality of food impacts quality of life -- plays out in her new book, Deliciously Organic. This military mom shares not only delicious recipes but also tips for stocking a more healthful pantry and making easy meals from scratch. So sit back and relax, knowing Dad and the kids have the right stuff in the kitchen . . . (Cookbook of the Month) --Working Mother Magazine - May 2011

I saw this book recommended on 100daysofrealfood blog and gave it a try, I really love her approach to healthful and organic cooking. Granted I don't use all ingredients Carrie recommends but her recipes are so easy to follow. Plus it gives me a better range of meals to serve at dinner and I really like that. I highly recommend her cookbook and her blog, continual useful information. Everyone's journey is different, so it's ok to add your own flare to the dishes but you'll find in most cases you won't need too

I must say that Carrie has hit it out of the park with this cookbook!! The recipes are simple to follow and incredibly delicious to the palate. I received a copy right when the book was published and can honestly say I've cook about 95% of the recipes, and with success. It has a great introduction that leaves you feeling like you know her. This book is more than a cookbook...it has useful information for someone who is interested in nutrition and eating a healthy, whole foods diet. Each section opens up with some great and useful tips on topics such as healthy tips to begin your day, tips on how to pick fresh produce, points to remember when buying your meat, poultry, and fish, and tips on the basics of a healthy kitchen. She even includes ideas for how to make the transition to eating better, as well as a whole section on resources. The books is loaded with colorful, mouth-watering pictures, and the food backs up the pictures. The recipes are well written and easy to follow, even for a cook who may not have a lot of confidence. I've given this book as a gift numerous times and friends have raved about it. Some of my favorite recipes include: Cheesy Egg and Mushroom Scramble, Butterball Chive Biscuits, Roasted Beet, Goat Cheese, and Sweet Pecan Salad (amazing!!), Mexican Rice Casserole (a real crowd pleaser at potlucks), Tuscan Lemon Chicken, Oven Roasted Wings (definite kid pleaser), and Strawberry Chocolate Cream Cheese Cupcakes. As well, she's done a fantastic job with her chocolate chip cookies. Oh so tasty. Carrie, you've done a wonderful job on your first cookbook and I hope you will make another one soon! This book should be a welcome to any cook interested in feeding her family and friends healthy, nutritious, and organically delicious food!!

Great recipes, beautiful photos, this book is a winner. I made the chocolate cream pie that is sweetened with maple syrup and it was a huge hit. I also love the oatmeal with buttermilk. Simple, delicious food that is not too complicated or difficult to make. I am really happy with this book, my teenage daughter has also started to think she wants to cook from it. Yay!

We love this book. I recently purchased it after taking the 100daysofrealfood.com food pledge. I love how Carrie explains how to shop and provides resources on where to buy certain products. She's so inventive. The most refreshing moment was looking through the dessert section and seeing how many things she was able to create using only real food recipes. This book has really helped us to see the possibilities and to create foods that are familiar to us without consuming processed food and harmful chemicals. This book was a great way to introduce the organic food lifestyle to my family.
