I also purchased the 3" colgate mini crib mattress which fit snuggly to all sides with no gaps. It's a little tight, but when pressed down, the mattress does not bow. On the mattress, I have the American Baby Company Waterproof fitted quilted mattress protector which fits great. On top of the protector, I have the American Baby Company 100% cotton jersey sheets. They are a bit thin and I wonder how many washings they'll stand up to, but they fit flat and tight on the mattress. I'll be buying additional sets of protectors and sheets now that I know they fit well together.
July 12, 2012: It's been over a year since I wrote this review and I'm please to say all above purchases are holding up great. The crib is solid, the mattress is still tight but doesn't bow, and best yet, I love the American Baby Company 100% cotton jersey sheets. They are easy to change, leaving no wrinkles for baby, and after many washings are holding up with no pilling. I have other sheets that I have to tuck the extra material under because they are a bit too big for the mattress even though they said they were for mini mattresses. The jersey sheets are tight, but I don't have to fuss much to make them fit perfectly. I bought two blue, and two white jersey sheets. I thought I'd like the clean white better, but I mainly use the colored sheets as they look better to me.
Update: I called Delta to request the free conversion kit that it claims comes with this. I could not get through to anyone on the phone. I emailed their customer service. I received a response that said: "if you are converting into a twin size bed please go to any mattress retailer store and purchase a twin size bolt-on metal bed frame." After a follow on email, I received this: "The mini cribs do not convert into a toddler bed. The only conversion is from a crib to a twin size bed. The mattress it comes with is sad, and really not up to safety standards. I didn't consider it in my rating. I purchased the Dream on Me 3" Portable Crib Mattress Dream On Me 3" Portable Crib Mattress which just came today. It fits perfectly! It's very tight on all sides, so no gap worries like with the sad mattress that it came with. I think it's firm enough too.
For a mattress cover I got American Baby Company Waterproof Fitted Quilted Porta-Crib Mattress Pad Cover and it fits well. I haven't washed it yet, but I'm actually hoping it shrinks just a bit when I wash it. It's plenty deep enough for the 3" mattress. I've also ordered the American Baby Porta Crib sheets, but they haven't arrived yet. Hopefully they fit just as well!

My baby is eight months old now, and I still love this crib. He's big for his age (95th percentile for length and weight) and he's totally fine in the 'mini' crib. I plan to use it for his toddler bed.
The sheets I mentioned above work alright. They are a little snug, especially over the matress cover, but they do work. I haven't felt the need to try any other brand yet. But when I do, I will probably try a different one.
