Product Description

The Dexter-Russell Traditional 41842-6 6" beef skinning knife has a wood handle and a high-carbon steel blade and can be used to butcher beef or poultry. The blade is made of high-carbon steel, which is harder than low-carbon steel and resists corrosion, stains, and wear to maintain its edge. The handle is made of wood, which is typically softer to hold than metal or polypropylene. Brass compression rivets secure the handle to the blade. The knife measures 11" long overall, with a 6" blade and a 5" handle. This product meets National Sanitation Foundation (NSF) Standard 2 for use in food handling and processing.

This is the new model that replaces the discontinued Dexter 3576 skinning knife, according to my research. Check out videos on YouTube by Capt. Vincent Russo - he demonstrates some amazing techniques for using this style knife for cleaning gamefish. The knife seems solid and of good quality. I think it will take a bit of work to get a sharp edge on it but after that it should do fine.

The angle is nice to slide into the legs, and keeps your knuckles out of the work area. Holds a rough edge well. No rust issues, but I dry all my knifes after washing. To me, It needs an extra coat of something on the handle to keep the blood from soaking in. Tung oil, wax..... something. Can't beat the price. Any do it your self deer processor would love one.

Great knife that I use for cleaning redfish, sheepshead, and drum. Its carbon steel, not stainless, so it'll rust if you don't take care of it. The tang doesn't match up 100% flush to the handle but still a very serviceable knife for the price. Not for those that aren't used to using old fashion carbon steel knives. Dexter also makes a stainless version with a molded handled for those that don't want to deal with the hassle of carbon steel and wood.

Not the old Dexter Russell knife I was expecting. The knife when it comes to you is not sharp. That is a real bummer. Had a very hard time getting a proper sharp edge in that the angle it was ground to from the factory was way off leaving thin and fat places on the edge that would need to be filed off until even to get a proper edge. Very disappointed on the product and does not live up to the old Dexter knife with the soft steel that would take a razor edge. The handle design is awesome with the "Don't thread on me" insignia and very patriotic, but I need a sharp knife. I guess I am back on the hunt for one of the old ones. The old Dexter knives are awesome. It may be the one I got this time just didn't get inspected before it shipped. I'll keep it and work on getting it sharp.

You have to sharpen it but once it is sharp it has the back nine to get through some narly fish. Love it. Use it to filet as well. All around a great utility knife for carving meat off the bone.
