Before I wrote this review I perused the book’s existing reviews and I notice a negative review about this book that, in my opinion, is way off base. The reviewer knocks the book for a recipe using 4 bananas instead of a measured amount of bananas. The only time I have ever seen a measured amount of bananas is when they are being mashed, other than that it is always a number of the fruit. I could only find one recipe in this excellent cookbook that used 2 large bananas, sliced and layered on top of the desert. He then mentions wrong ingredients in a recipe that I could simply not find.
He does have a somewhat valid point about using granulated sugar in the recipes. But I could only find 3 out of the book’s more than 40 recipes that used granulated sugar and it is certainly easy enough to convert to sugar substitute. Finally his challenge to using a glucose meter makes no sense at all. I understand the importance of using a glucose meter to monitor sugar levels, but it is not a reflection of the quality of a recipe but rather the monitoring of a diabetic’s lifestyle.
I would have to say that this person is way off base and has little basis for his low rating of this diabetic cookbook.
Again, I believe that Dick’s Desserts & Cookies Diabetes Cookbook is an excellent collection of healthy diabetic dessert and cookie recipes that will become a favorite for any home cook.
This book fills a real hole in my available menus. Especially helpful is the variety of desserts the author presents including cakes, pies, cookies, even bread pudding. He also provides all essential nutritional and exchange information following each recipe, absolutely essential for a cook who, like me, is trying to manage in a diabetic household.
This Christmas, I was tempted by a lemon tart. When I saw three, count them, three, cups of sugar were called for, I resisted. Richard Terry presents a lemon cookie in this collection which I won't have to resist.
This is a valuable addition to my diabetic cookbook collection and I recommend it without reservation.
I like that the author uses easy to find ingredients and the recipes don't require any special kitchen equipment. The recipes are all quick and easy. The Sumptuous Strawberry Truffle is absolutely mouth-watering… I can’t wait to try them all. Great resource for both diabetics and those watching their sugar intake for health.
You cannot possibly get correct results with mistaken ingredients. And nobody can duplicate these recipes if we are given fuzzy instrctions. '2 large bananas' is both a fuzzy instruction, and a mistaken ingredient. Correct would be, for example, '300 grams strawberries' . 'Granulated sugar' is so mistaken as to make me wonder if the author knows anything at all about diabetes.
The ultimate Judge of whether or not these are good recipes is a Blood Glucose Meter. I challenge the author to a duel, where a blood glucose blood test will be our weapon and a Glucose meter will be the Judge. There are some very good recipes in this book, but a cookbook for diabetics cannot have some good and some bad recipes. Some of these recipes will raise blood sugar to 130 or 150 mg/dl or even higher and that is unacceptable.
