If you've ever had really good Dim Sum, and I'm not talking about Americanized-grocery store type--I mean, really good Dim Sum--this is the cookbook for you! Growing up in a family filled with traditional Chinese cooking, this book has the recipes down to a "T". Time consuming, but all good food naturally is...it is always well worth the hard work and love.

This was my first Dim Sum book, and I have enjoyed many hours and astonished many parties with recipes I made from it. One gets the basics of doughs, fillings, wrapping, and cooking handily from this book which, once mastered, can lead to the creation of original recipes. This is one of the two books essential to preparing Dim Sum (the other is Chinese Dim Sum (Wel-Chuan School)).

My Chinese mother-in-law gave me this book several years ago. It has recipes that are easy to follow and with great results. Imagine being able to make your own barbeque pork, hum-bow, and pork dumplings! And that's only scratching the surface. Some recipes, such as the noodle dishes, cook up in a flash, while others, for daintier fare, take a bit longer and require some planning. The ingredients needed should be easy to find in most cities that have Asian grocery stores, or in large grocery stores with Asian food isles.

Have fun and amaze your family and friends with your own Dim Sum party or simply make a dish or two for a quiet dinner. One of my favorite cooks books of all time.

About ten years ago I had the good fortune to be a student of Chef Rhoda Yee. Because of her wise and good-humored teaching style (as demonstrated in this little book), my Chinese-style cooking is a hundred times better than it was three weeks before I met her. She teaches technique here, along with an understanding of yum cha and the meaning behind (and beyond) the food.

This is an older publication pretty much low tech in presentation, so the effectiveness of the menus are immediate and oh so delicious. Her techniques are virtually just as I remember my great aunt doing preparing these same dishes. As a child we would all "assist" my great aunt and enjoyed the fruits of our labors mightily. I've replicated that pleasure and probably that memory with this handy book. Her technique and descriptions, all overwhelmingly verbal given the time when this was published, are immediately useful and insightfully practical, displaying all the years she spent teaching classes in these preparations for so many years. The preparation of really useful basics such as the various pastry skins and wraps using off the shelf ingredients are such gems, when you're not near any markets with decent Asian foodstuffs. In effect this modest tome makes you independent as a creator of dim sum as well as classic homestyle side dishes, often described as soong in Cantonese.
