I tried several recipes while preparing for this review, and we enjoyed all of them. One of our favorites was Baked Spaghetti Bolognese (p. 9). One note, however: I don't know if I measured incorrectly, but I did not have enough sauce and had to use extra straight from the jar. It was still good, though.
We're serious pasta lovers, so we also tried (and loved) this one:
1 lb. ground beef
3/4 cup chopped onion
1 cup sliced fresh mushrooms, optional
2 cloves garlic, minced
3 cups beef broth
2 1/4 cups water
1 6-ounce can tomato paste
1 1/2 tsp. dried oregano
2 tsp. dried basil
1/2 tsp. black pepper
10 ounces dry spaghetti
1/2 cup grated Parmesan cheese
Brown ground beef with onions in a large skillet over medium-high heat until beef loses its pink color. Drain beef and wipe out skillet. Return meat to skillet. Stir in mushrooms, garlic, beef broth, water, tomato paste, oregano, basil and black pepper. Bring to a boil. Break spaghetti into 2" to 3" pieces and add to skillet, a little at a time and stir until spaghetti is covered with liquid.
Reduce heat to medium-low and simmer, uncovered, for 17 to 20 minutes, or until spaghetti is tender.
Serve with Parmesan cheese.
