My review is 5 stars because this seasoning is not too salty, hickory can be enjoyed, and the box says 5lbs - it's up to individual taste. Game may well need additional spice to overcome the flavor. Beef is spot on. I have used this many times with beef and always get reproducible results.
Put the powders into a large spice shaker with large holes. Sprinkle on each layer of meat in a nonmetallic tossing bin. When finished make sure to toss, toss, toss, to coat every pieces. Oh - if you slice meat more than 1/4 inch, better pour more Eastman in to make sure to cure correctly. Refrigerate 24 hours.
Dry for 4-8 hours depending on the thickness. Enjoy it. Adjust on next batch.
I just bought four more boxes as my friends and family know my jerky and always ask for more.
Also, be sure to read the fine print! At the very bottom of the instructions it says to add 1 tablespoon of your favorite whiskey in with the seasoning. I forgot this on my last batch and it definitely was not as good as the one before it.
This item is fantastic, The only downside i can think of is if the curing salt and seasoning, were portioned off into smaller portions. It was a little hard to play alchemist and try and preserve half(however many grams it was) of powdered seasoning and curing salt seeing as how I didn't purchase 5lbs of meat. That is another item i should probably blame myself for, so in that case it deserves a five in my opinion.
I just like how this Eastman Outdoors jerky mix that i bought for myself , really gives my jerky a nice full rich flavor , with no after taste, i just got myself this sweet BBQ flavor to try out this , and this makes 5 pounds of jerky also.

This comes with everything needed except the meat you provide that , and it has full instructions , on which ever way you like to dehydrate your jerky , me myself i always do the oven method yet it always comes out nice and tasty , and not dried out .
So this deer season i will be fully stocked up with Eastman Outdoors jerky mixes , i like the flavors, and how my jerky comes out and the texture and taste
I let it keep drying and ended up overdrying it a bit, but that actually made it better. Although I still didn't notice a real "cajun" flavor per se, it did have a little spice to it, which you can get in any other "spicy" jerky mix. Otherwise it tastes fine, after really well dried.
This product comes in one packet of flavor and one packet of cure, so either you need to do the full 5lbs or try to measure out the correct amount for what you're doing. I prefer the 1lb packages as I don't normally find 5lbs chuncks of meat on the cheap...
