These however, come neatly packaged in a small, re-usable and re-sealable pouch. Any excess casings can be tossed back in with some kosher salt and be re-used quite easily.
The casings also come pre cut in 10ft long strips which are just about the right size for stuffing small batches of sausage. Cooks looking to make batches greater than 5lbs will probably be turned off by this, but for someone like me who only has a kitchenaid mixer for my sausage stuffer, it's just the right size and length to work with.

The casings should be cleaned after soaking in warm water for 30 minutes. Cleaning is most easily done by inserting the end of a funnel -- or sausage stuffer attachment -- into one end and *slowly* running warm water through the entire length, unraveling and untwisting as needed. This should be performed at least twice.
Since we'd known to do that, we had no problems whatsoever with these casings. The boudain turned out wonderfully, and I'm looking forward to making more!
As for the taste and texture, some of the casings were thicker than other pieces. Either way, after grilling the sausage, you could really taste the casing. You're teeth or knife can easily break through the casing.
Pros: They were easy to separate and rinse. I didn't have trouble getting the ends separated for running water through them. I would, however, recommend straining or plugging off the sink while rinsing because I accidentally almost washed one piece down the drain and it got stuck with water in part of the casing about the size of a sausage. I take the blame for that because it was user error and nothing more. The cooked product was comparable with sausages similar that I've bought from the store. The casing texture was tender and made a light snap when bit into.
Cons: For a person who prefers longer sections these wouldn't be good. The length ranges from around three to five feet. I didn't mind at all working with the shorter pieces but more consistency in length would be optimum because it would be easier to get evenly sized sausages. Also, I recommend soaking these considerably longer than the package recommended 30 minutes. Even after an hour the casings didn't stretch as far as they should. After two or three hours they were just about perfect.
These come salted and soft and ready to stuff. You simply take them out of the package, soak them, rinse, soak again and then use.
A few hints: It is easier to feed these onto the 'nose' of the stuffer if you rub the 'nose' with a little bit of olive oil,. Also, do not get excited if it's your first time making sausage thinking you will use all of the casings in the package. This package has lasted me while making more than three batches of sausage. Also, they are not tangled up, they are knotted together with a simple slip knot.
With one exception I have not had any problems. The only problem I did have with my one exception was that the casing kept breaking. Otherwise they all worked perfectly.
Well worth the money.
