Easy Paleo Gelatin Treats is filled with so many great recipes to utilize gelatin. Caitlin Weeks talks all about the importance of sourcing quality grass fed gelatin and why we should include this protein and amino acid rich substance in our diets.

Even though most people hear gelatin and automatically think of jello, there are even more uses for it than that! Caitlin includes recipes using gelatin like smoothies, lemon bars, panna cotta, gummy bears and more and they all have very minimal sugar content and use natural sweeteners!

These recipes are great for low-sugar healthy kids snacks or even high-protein snacks for adults to bring to work! I also love that each recipe includes a photo.

I don't rate many things down unless it is a product that just doesn't work. However this book was a huge disappointment. If you know how to cook you don't want or need this book. It contains recipes that are simple jello from scratch. I was hoping that it would contain creative ways to use gelatin. You can add gelatin to quick breads and to make ice-cream. I was looking for recipes that would expand on the two recipes I had and hopefully explain the cooking properties of gelatin. No such luck. Most of the recipes use coconut milk. which is good but a little redundant. For those who don't like the taste of coconut milk or do not tolerate it this book is wash. Most of the recipes are variation on a theme. If you have one recipe you have them all. Actually you need three recipes out of the book to make all the others.

Loved it! I tried the recipe for Turmeric Golden Stars. I was afraid they would taste awful but with just two Tablespoons of Pure Maple Syrup rather than the suggested three, they were actually very good! I am intending to try most of the others also. I love that the book is not just recipes but filled with information on WHY gelatin is good for us and WHY it is especially important that the source of the gelatin be from healthy, pastured and cage-free animals.
Before reading the recipes, I was afraid that they would be full of sugar to make them palatable. I am diabetic and really have to watch my carb' intake. I was very pleased that the book is intended to be healthful for everyone, not matter what dietary restrictions they have.

Warning! These gummy recipes are not real gummies. These are only variations of jello jigglers recipes. They are not at all like gummies. The recipes are healthy and there are some other deserts that look interesting so it's not a total waste.
If anyone knows of a book with real gummy recipes, please let me know.

Caitlin Weeks has done a fantastic job creating healthy and delicious treats! I have made several of these recipes for my family, including the coconut water gummy stars, the kombucha gelatin and the mini raspberry cups. They have all been a hit with the entire family, including our toddler. Caitlin is a nutritionist and I really appreciate her section on the health benefits of gelatin. When many people think of jello, they think of the processed, food coloring ridden stuff you find in a box. Caitlin teaches us why real gelatin from grass-fed cows is a true supefood! I

I got this on my tablet today. So far I have only made the Pumpkin Pudding and it was delicious - could also be used for a pie. I topped it with sugar-free maple syrup. Rich, but delicious. The recipe filled 3 (4 oz.) ramekins. Can't wait to try the brownies.

I have started incorporatiing gelatin into my diet for improved nails, hair and skin. I was so VERY excited to have found this cookbook full of great recipes using gelatin! You should get it immediately so you can make all kinds of treats with your gelatin. I would recommend Great Lakes Gelatin as it tastes the best and is from gras fed animals!
