About the authors

As author of the best-selling nutritional cookbook Nourishing Traditions, Sally Fallon Morell is the leading spokesperson for a return to nutrient-dense diets including raw milk, animal fats, organ meats, bone broths and lacto-fermented foods. She is the founding president of the Weston A. Price Foundation (www.westonaprice.org) and a founder of A Campaign for Real Milk (realmilk.com). She is also president of NewTrends Publishing (newtrendspublishing.com), which publishes books on diet and healthy, including books in the Nourishing Traditions series.
In 2009, she and her husband Geoffrey Morell purchased P A Bowen Farmstead (pabowenfarmstead.com), where they produce award-winning artisan raw milk cheese, woodlands pork, and pastured eggs and poultry.

Mary Gertrude Enig, Ph.D. (née Dracon, 1931 – September 8, 2014) was a nutritionist and researcher known for her unconventional positions on the role saturated fats play in diet and health. She promoted skepticism towards the widely held view in the scientific and medical communities that diets high in saturated fats can contribute to development of heart disease, while she advocated for a diet based on whole foods and rich in certain saturated fats.
Along with Sally Fallon, Enig co-founded the Weston A. Price Foundation (WAPF) in 1999. According to WAPF Vice President Kaayla Daniel, Enig died of a stroke at the age of 83.

So now I am following the book's advice and am eating more fat. I immediately noticed a difference -- less cravings and an immediate drop in fat around the waistline and elsewhere. I am reducing carbohydrates and starches, but slowly in a zig-zag pattern to carefully note how the dietary composition affects weight, energy, mood, and other aspects of health.
This book is mostly recipes but the first section is full of useful facts. It lacks crucial footnotes that are probably in the longer book by the same authors. Many of the citations are very old so they may be classics or defective by modern standards. If the references are correct they are very important and need to be taken into account by current dietitians and researchers.
The key recommendation of the book is to use coconut oil that I previously had no experience with. It is a staple in many countries so there should be considerable epidemiological evidence that could be reported in the book. So far I like coconut oil. I also like butter and am glad the book gave me more reason to use it. I also like wheat germ oil and cod liver oil as recommended by the book. I immediately started feeling better when using these oils even though I previously thought them to be unhealthy empty calories (lack protein). It is not clear what is the optimal dose of these oils.
Overall this book is well written with great recommendations. Should be read in conjunction with easy current information such as the Dr. Lustig video "Sugar -- The Bitter Truth." More difficult is actual scientific literature on cholesterol and "the lipid hypothesis" which can link to numerous researchers and topics that support the ideas of this book. I never was a fast-food person and was pretty good about eating a "healthy" low-fat diet. So why didn't I feel really good? This book was the first I read in exploring a new way of eating that has brought myself and my family newfound health and vitality. We no longer endure those nagging food cravings - wandering around the kitchen opening cupboards trying to find that certain food to fill a void - is a thing of the past.
This book is full of information about fats; which ones are benefical and which are detrimental. I wasn't about to just take it as gospel though, without further investigation. I went on to read Nourishing Traditions, The Untold Story of Milk, and if you don't mind a bit of dryness for the sake of tons of carefully collected information, Dr. Weston Price's amazingly researched Nutrition and Physical Degeneration.
Eat Fat, Lose Fat presents the beginning of a much larger scenario that is both frightening and hopeful. Frightening because in just a few decades we have strayed so far from traditional healthy eating habits to a nation that relies far too much on heavily processed, over-heated, over-sugared, over-chemicaled food sources. Hopeful, because even though a near-radical change in eating habits is not easy, it is certainly worthwhile and of tremendous mental and physical benefit.
We eat differently now - preparing food takes a bit more preplanning, especially at first while you are learning a new way. Gathering our foodstuffs has become an adventure that I have enjoyed tremendously - buying pasture-raised eggs from our neighbors, organic veggies from small family farms, certified raw milk from a local creamery. I also have a whole new appreciation for our great natural foods store that, thankfully, is only a few miles down the road. If you don't have one near you, don't worry - you can conveniently shop on the internet for a whole array of carefully produced organic foodstuffs at reasonable prices and have them delivered right to your front door. In most areas, you can arrange for weekly pick-ups/deliveries of organic produce from wonderful little farms in your area. For the first time in years I have tons of energy and have planted a huge garden with all kinds of veggies and fruit that my family will thrive on. I've made arrangements to buy half a grass-fed beef this coming fall. So don't let the fact that this type of eating takes a little more time and effort deter you - you will have the extra energy and optimism to do it!

This book made me think about my old relatives. I grew up on a farm and let me tell you, when I was a kid eating at great-great aunt's place, delicious food! It was loaded with healthy fats and it was wholesome foods. These people lived to 90 years old and not sick, fully functioning with great memories. This holds more truth in my books than any low fat food craze can possibly contain. That short-circuits your system and has you wasting hours of your life eating every two hours because you get jittery. Try it, you will be amazed.
Also, please note that it's not like everything is supposed to be dripping in fat, a bit goes a long way.
ALSO CONTAIN plenty of other information on diseases arising due to usage of wrong fats and oils and how to avoid it using coconut and other beneficial fats and oils.
