Jeffry Gerber, MD, FAAFP, is a board-certified family physician and owner of South Suburban Family Medicine in Littleton, Colorado. He is widely known as Denver’s Diet Doctor. About the authors

Ivor Cummins BE(Chem) CEng MIEI PMP® completed a BioChemical Engineering degree in 1990. He has since spent over 25 years in corporate technical leadership and management positions, and was shortlisted in 2015 as one of the top 6 of 500 applicants for “Irish Chartered Engineer of the Year”. Ivor’s focus and specialty is leading teams in complex problem-solving scenarios. He has often led worldwide teams with over 60-70 engineers working on major technical issues; the largest of these involved product issues where huge potential business losses were at stake.
Several years ago, Ivor encountered a complex technical challenge in his personal life. Receiving poor blood test results, he was unable to get solutions via the doctors consulted. He thus embarked on an intense period of biochemical research into the science of human metabolism. Within eight weeks he had resolved and optimized all of his blood test metrics. Also, he had shed 35 pounds / 15Kg of bodyfat with ease. In the following years he continued his research on the many “root causes” of modern disease, from “cholesterol” through to insulin resistance. He has become a professional speaker of note, giving many public lectures and chairing interviews with worldwide health experts. Most notably he was invited by the President of the British Association for Cardiovascular Prevention and Rehabilitation (BACPR) to give a keynote talk on heart disease root causes, at their annual conference in London last October.

Nice piece of work Ivor Cummins and Dr. Jeffery Gerber. Before I get into the book here is a very short personal bio. I have been passionate about the field of nutrition and how it relates to not only our physiology but to human performance since the age of 13 and I am now 55, a span of 42 years. I am an avid reader of at least 2-3 books per month but have never given a review. I feel it’s time to start waking others up and if I can’t do it through my own writing what better way than through those that know what they are talking about as I have experienced it in my own life. My disdain for the medical establishment goes back over 3 decades and since then I have not been to a doctor for any type of health issue while my use of medications in that same time period has been as close to zero as you can come. Everything I do personally is through food because food is medicine once you begin to understand the effects of the various macros/micros and how fear and marketing manipulation is used to generate profit at the expense of health. It’s not simply some saying it’s a fact that food is the medicine. I am extremely lean as I still compete in a sport based on weight divisions. That might not be your goal but with real information you can start moving in the right direction.
This book is wonderfully put together with the beginning very easy to comprehend while still giving the reader a thorough understanding of the science behind it all. For those in doubt the last third of the book gives you all the technical data you need which will help remove any doubts. The middle of the book will appeal to those that love a high degree of variety in their diet with plenty of flavor to boot. It’s filled with exceptional recipes and the mouth watering photography. You will be asking yourself can this really be possible and my answer would be yes. The recipe/pictures are similar to what you often see posted to social media only these recipes come with the added advantage of moving you towards robust health.
What initially drew me in to purchase this book as I have followed this lifestyle for over 25 years was Ivor’s charismatic speaking style when it came to the technical information. I found it to be extremely appealing and something you rarely see in the space. Anyone can view his YouTube videos to confirm that yes indeed he is a complex problem solver that can explain complex issues in simple terms and likewise for Dr. Jeffery Gerber.
Anyone interested in losing weight, having more energy, feeling better about themselves both physically and mentally should seriously consider purchasing this book. It could very well be your tipping point too where everything changes. Similar to what happened to me 32 years ago when I realized the medical establishment and the information being presented to the public was not what I thought it was which I assumed was for my benefit. Instead what I found was that it mostly profit driven with very little integrity. The further one digs the more the truth starts to surface. I actually had to read hundreds and hundreds of books over years to begin to figure it all out. Many today have the opportunity to get a headstart…………I would suggest taking it.

His and Jeff's book is the most impressive and valuable that I have seen in the field of health assessment and improvement because it not only explains what and when to eat, but the “why”, i.e., the mechanisms behind the great advantages of a low carb diet. As a scientist, I greatly appreciate that you delved so deeply into this topic. I bought multiple copies of your book to give to my Medical Doctor and my friends and family. I have never bought multiple copies of any book before; I think it is that good.
I hold a Ph.D. in Biology, and worked for 20 years as Quality Assurance Officer at the Illinois Environmental Protection Agency dealing with complex problems and processes and getting to the root causes in order to correct them. At the IEPA I worked more with engineers than biologists so I believe Ivor and I have similar, data driven approaches to getting to root causes and solving complex problems.
About three years ago, at the age of 69, I got interested in achieving optimum heart health since I spend a considerable amount of time in a rather remote area of the Philippines where people with heart attacks simply die from lack of medical facilities and transportation to those substandard facilities. I did not want to be one of those people that looked healthy, but died from a sudden, “unexpected” heart attack or stroke. Luckily, there happened to be in my town a physician that was aware of diet to reverse diabetes and was helping his patients to achieve optimum health. I was impressed that although my physician orders the usual complete blood chemistry, including inflammation markers and lipid particle size counts, he also uses two totally noninvasive assessment methods that the authors do not mention in and of which maybe Ivor and Jeff may not be aware.
The first assessment method is the carotid intimate-media thickness (CIMT) ultrasound scan which directly shows the degree of atherosclerosis (CVD for short) - cost $200. This test gauges arterial health by measuring the thickness of the intimate-media layer in the carotid arteries, and based on this measurement, gives arterial age compared to chronological age. CIMT also visualizes and measures soft plaque (before calcification), which gives an earlier warning signal than CAC which can only detect calcium. CIMT does not expose a person to any harmful radiation as does CAC. The obvious disadvantage is that CIMT does not specifically asses the degree of CVD in the coronary arteries. This is the reason that although I have been getting a CIMT every six to twelve months to track the results of my efforts to improve my diet and lifestyle, I did have one CAC to see the actual degree of CVD in my coronary arteries. The results could not have matched more closely; both the CIMT and CAC showed I had an arterial age of 45-46 years at the chronological age of 72. While the advantages of CAC are obvious, it seems preferable that folks have one or more broadly spaced CACs, but monitor their progress over shorter time periods using CIMT. CIMT catches CVD earlier than CAC and does not pose any radiation hazard. Another advantage of CIMT is that it can track reversal of CVD much faster than CAC (which depends on reabsorption of calcium to show progress (which may not happen). For example, my wife’s CIMT arterial age dropped by ten years over the course of one year of eating a low carb diet; I am pretty sure this improvement would not have been measurable using CAC.
The second assessment method utilizes the InBody 570 Body Composition Analyzer, which not only gives general body composition (fat to lean muscle mass, etc.), but the all-important visceral fat level which is linked directly to hyperinsulinemia. This test takes five minutes and costs $20. It is the main method used by members of our local CrossFit gym and my physician to measure their progress toward improved or optimum health. Admittedly, this is not measuring the root causes of visceral fat deposition, actual high insulin levels and insulin resistance, but it does directly and easily measure the deleterious results of hyperinsulinemia, the bottom line. Some of our gym members get this measurement on a monthly basis early in their journey to health which provides a very strong incentive to stick with the program.
I learned so much new material from your Ivor's videos and book that I just wanted to share some knowledge that I have that others could consider.

I stumbled onto a LCHF (low-carb, high-fat) way of life 4 months, ago through my son. I am 69 years old and have been following the Standard American Diet my whole life. I was just as outraged as Ivor Cummins and Dr. Jeffry Gerber to learn that I have lied to all this time, and many formal institutions in Canada and the States still perpetuate the idea that the correct way is to eat a high-carb, low-fat diet.
It is very hard to convince the people that you love that THIS diet is their salvation. In a recent public opinion poll, in the States in January, the Keto diet (an extreme form of LCHF) came in 29th out of the 30 diets in the poll! My sibs think that this is just another diet. Nothing could be farther from the truth.
Cummers and Gerber present the science behind their assertion that a LCHF diet will reverse Type 2 Diabetes and improve your lipid (Cholesterol) scores. However, there is a caveat: not everyone's reaction will be the same. The reader has to own their own health, not a common attitude in Canada, where the most common phrase is "my doctor is happy with my blood results". This is what both Cummers and Gerber had to face in their own lives, where their doctor's couldn't explain what was happening to their bodies, so they had to research this themselves.
The result is that they have produced a book which is a blueprint for healthy living going forward. It doesn't matter how old you are when you start. I was amazed, as you will be, of how much I was affected by my food, and how quickly I lost the hunger which had been a constant companion for years. Again, not everyone is the same. Your reaction will depend if you are insulin resistant or not, if you are fat or thin, and on your heritage. However, everyone will benefit by stopping to eat processed bread and cereals (all processed carbs, actually), pastas, refined sugars and vegetable oils.
I bought this book for my sibs. I hope that they will follow its recommendations.
