Frances Largeman-Roth is a registered dietitian and the former food and nutrition director of Health magazine. Currently she is a contributor to and TV spokesperson for Cooking Light magazine. The beautiful images of the food really bring the recipes to life and make it difficult to resist their lure, as does Frances' friendly prose. I've never been so excited to eat vegetables and whole grains! This book really gives the reader practical and fun ideas for eating a healthier and more colorful diet -- everything looks so good on one's own plate, not just in the book.
"Eating in Color" makes a perfect gift for friends and family. I have already sent off 20 copies and have ordered some more!! My gratitude to Frances Largeman-Roth.
Nutritional value and and health benefits are at the heart of this slender, lovely volume, and each food discussed merits equal love and attention. A friend gave the book to me as a gift, and by the time I had leafed through it on the metro I had selected my dinner for that very evening. My family guests included a two and one-half-year-old granddaughter, and the recipes are ideally suited for the young as well as the adults. This is just one of its compelling features. We are encouraged to use fresh ingredients, and to be aware of the presentation: "Don't be monochrome,"is one of the five cardinal rules given for healthy and immensely satisfying meals.
I love to cook, and own many fine cookbooks. This book is the one with which I am having the most fun! And a cook's enjoyment augurs well for a delicious repast. The author's "philosophy of cooking" is refreshingly sane.
I would recommend this if you're just looking for inspiration for different fruits and vegetables to incorporate in your diet, but not if you're really looking for recipes.
