This is one of those times I wish there was a more detailed rating structure. It was not what I expected. I remember getting raw honey as a kid that was still in the hive. That's pretty raw, and obviously hasn't been pasteurized, or the wax would have melted. My problem in THIS case is that they SAY it is not pasteurized, the definition of which is "A process of partial sterilization, especially one involving heat treatment or irradiation, thus making the product safe for consumption and improving its keeping quality". The Amazon site says the it is specifically UN-PASTEURIZED. When it arrived, there is a label affixed to the container that says exactly the opposite. Able also says organic, but it's NOT organic? Not sure what to believe. It IS tasty, but is much thicker than I expected,almost like hard wax.

EDIT: I wrote directly to the manufacturer mentioning my confusion. They assure me that the honey is NOT pasteurized and they are unsure of where the label came from.

This is their CONVENTIONAL honey not their ORGANIC honey. You can see it on the jar, no mention of organic, a plastic jar not a glass jar, and they do not sell organic in 3lbs either only 32oz or less. The producer name was YS ORGANIC FARMS but they changed it to Y.S. ECO BEE FARMS. I purchase YS all the time which is sold in conventional, very popular, in plastic jars not glass jars, 22oz for $6.39 or their organic form in glass jars not plastic jars 32oz for $12.99. I Never place honey in the sun or try to heat or get it runny since I just consume it directly out of the jar with a spoon in solid form so I will not be killing the pollen which I am paying for in quality honey. In middle of summer at 100 degree temperatures, it will melt when being transported but regardless, always purchas the honey or any food ingredient from trustworthy seller with high sales. I can feel the quality of raw, unfiltered honey in every jar produced Y.S. The organic YS honey is usually a bit darker and less sweeter but regardless the unfiltered honey is the only way to go unless one is looking for a sweetener not a honey with pollen with all its health benefits. Organic honey is truly worth the price difference since you will taste the difference.

REAL HONEY: Raw honey is expensive but on the net you can purchase raw for less than the sweeteners that are sold in most grocery stores as honey. To combine RAW and USDA organic and add qualities like Only 100% pure raw, unpasteurized, unfiltered, undiluted, untreated, unprocessed, no HFCS, not adulterate, not blended with other items such as corn syrup and rice syrup, makes it the true honey not as a sweetener tasting like a honey. For that reason that superior product, that superior superfood never sells in big buckets.

Here is why I gave this item a 1 star rating. When I purchased this product I read the label and it stated in large letters "RAW HONEY". I didn't notice the smaller print underneath the RAW HONEY that stated "U.S. Grade A". My dad told me that they "stuck me"! He said that U.S. Grade A honey was heated to 160 degrees F. I was upset and I did a little research. I went to the internet and typed in U.S. Grade A honey and one of the entries was to the US Dept. of Agriculture who has oversight on the Grade ratings.The bottom line is that there are 4 grades: A, B, C, and D (everything else that can't meet Grade C). The grading has three items it looks at in the scoring. Flavor and Aroma, Absence of Defects and Clarity. Each category is given a number. If a honey product gets a 90-100 it's a Grade A product. 80-89 is a Grade B. 70-79 is a Grade C. Everything below 70 is a Grade D. This would mean that raw unprocessed honey (like I wanted) is a Grade D. Hey, that works for me! Under the USDA Clarity testing the honey may be tested for crystallization. In that testing it is stated: "Crystallized honey shall be liquified to 130 degrees F and cooled to 68 degrees F before determining the grade of the product. I learned from another source that enzymes (the life in the honey) is complete destroyed when heated to 130 degrees F. Therefore, according to this report from the USDA regarding the grading of honey, they've killed the life I wanted in my honey.

Here is something else I found out in my research. I HAVE NO REASON TO BELIEVE THAT Y.S. ECO BEE FARMS USES IMPORTED HONEY. I found that honey imported let's say from China can have their honey heated to 180 degrees F and blended with other honeys from other countries.

Our very favorite raw honey comes from All About Bees in Ralston, NE but this honey is a very, very close second. I resorted to bringing in honey from afar when I no longer had access to our favorite. I wanted to buy honey locally and everybody says theirs is "raw" but it isn't unless it is cloudy and a bit gritty like this one is (those are good qualities, I promise!). My kids quickly came to enjoy this texture and taste as their favorite. The clear stuff is too cloyingly sweet. Anyway, I will be using this as the honey for my family and the 3 pound size here on Amazon with Prime is a great deal when they can keep it in stock!
