Possible negatives: Pickarski does use things like seaweed, agar and tofu in some recipes, but certainly not all or even most. You can get agar or dried seaweed easily online and probably in any large city. Also, I would think that beginning cooks might find some of the recipes challenging and time-consuming. The best dishes I've had from this have all taken some time to make but well worth the effort.
I ended up getting a second copy to send to my mother who has also raved about it. I have a number of vegan cookbooks and would rate this in the top tier. If you're looking for something different and don't mind spending time on a recipe, this might be the book for you.
