That being said, this system is still surprisingly expensive. Most of the components are made of high-density plastic or stainless steel. While the build is good, with high tolerances all around, that doesn't strike me as particularly difficult in today's world of high-volume manufacturing. Clearly it's not easy though, as from my research most of the Chinese copies are inferior.
People make the argument that the system is partly so expensive because of the high-quality stones. I'm skeptical as you can buy replacement stones for about $20 each. The stones themselves are not particularly large, either. If you were to buy a freehand sharpening stone (i.e. a standalone wetstone), your dollar-per-gram of stone is probably vastly cheaper. And remember, the stones will wear down over the years and need to be releveled or replaced, particularly the low-grit stones.
In the end, I decided spending the extra money was the only way I would have access to a method of sharpening my knives to as close to their factory condition as possible, and now could give access to this services to friends and family and sharpen their knives. That's really the only way to justify the money, as you really only need to sharpen a set of kitchen knives once every 2-3 years with average use. I chose the Apex 1 because I only needed grits 220, 400 and 600 for kitchen knives (anything over 1000 is really for show and completely unnecessary for an average home kitchen), so I purchased this set and the 600 stone.
I suspect that as popularity with the system increases, someone will come up with a high-quality copy and the price will change dramatically. For now though, I'd go with the original!
Well I watched the Edge Pro you tube a few times, looked at all the reviews here and plunged in.
What I discovered (provided you watch the video and read the short instructions) is that this tool is actually easy to use! I was concerned the left handed operation would be difficult but it isn't (at least not for me).
I had 7 quality kitchen knives, everything from a chef's knife to a serrated bread knife to a paring knife. They were not horrible, just not getting good results - nothing would slice a ripe tomato.
Using the 200 and 400 stones I was able to do these 7 knives in about 90 minutes. And I was able to slice paper as in the video. And tomatoes are a breeze!
It's smaller and lighter tan it looks and the carry bag is perfect.
