Directions

To toast organic coconut: Heat oven to 350 degrees. Spread coconut in thin layer in shallow baking pan. Bake 5 to 10 minutes, stirring occasionally, until light golden brown.
To store organic coconut: Store tightly closed bag of coconut in refrigerator or freezer for up to one year.

This is one of the best brands of organic, unsweetened coconut flakes I've ever tried. It tastes wonderful. One of the true tests for coconut for me is trying to replicate (without as much fat and sugar) Häagen-Dazs Pineapple Coconut ice cream. For my taste, it does a terrific job.

Here's my recipe using almond milk and stevia, so it is lactose- and sugar-free:

1 cup crushed pineapple, unsweetened, 140 calories
1/4 cup Let's Do Organic unsweetened coconut flakes, 134 calories
2 tsp stevia, zero calories
2 T vanilla (I make my own with Beanilla Tahitian Vanilla Beans), zero calories
4 cups unsweetened almond milk pre-frozen in ice cube trays, 120 calories

I run the coconut through my Vitamix blender to turn it into coconut flour. However, if you don't have a really good blender, or grain grinder, you can just buy Let's Do Organic Coconut Flour.

I add in the pineapple, vanilla and stevia and whip until it contains as much volume as possible.

I then add half of the frozen almond milk and again whip until it has a lot of volume and is smooth. Then I do the same for the rest of the frozen almond milk.

I was quite surprised at how incredibly good this coconut tastes. I will never again purchase what the grocery store sells. It is so good right out of the bag, that I ate more than I should have, I just couldn't resist. I am thinking of buying a coconut cookbook so that I can use this product daily, that's how much I enjoyed it.

These are great for making macaroon cookies. They bake up nice and crispy. If you want more finely shredded coconut, you can use a food processor to chop them up. I make macaroons regularly as a tasty way of adding healthy coconut to our diet. Since these are organic and unsweetened I use my own sweeteners and other healthy ingredients to make great recipes. Buy in bulk if you plan to use the coconut regularly. Note, these are dehydrated flakes, so macaroons made with this are not the usual kind made with fresh, finely shredded coconut. They are more crispy like a cookie and we love them.

I was looking for good organic coconut and this sort of fit the bill. The flakes are LARGE (about 1/2 inch by 1 inch), not really the sort of thing that's easy to use in baking or cooking. I'll have to figure out how to shred it now. It's not sweetened which is a PLUS, but it also wasn't super duper fresh, at least it that's how it tastes. It's A LOT of coconut for the price. I have so much I have to invent new dishes to use it all.

If you are looking for flaked dehydrated coconut, look no further. I can't say that I've tried all the brands out there - mainly because I had all but given up on American coconut flakes, that always tastes like cardboard. Similar Brazilian products tend to be less dry, you bite into a flake and taste the coconut natural oils. Well, this is as close to that as I've ever tasted. The flakes might be dry outside, but are still juicy & flavorful. I eat these as a snack and a treat, straight out of the bag!

It's ok, but I probably won't buy these unless all other brands are out of stock. I don't know what it is about their flakes, but I just didn't care for the taste of the coconut butter that I made out of this brand's coconut flakes. I purchase this brand's coconut cream and it's fine; but their flakes being used for making coconut butter is out for me. I'll stick with Nutiva or Tropical Traditions brands - they taste WAY BETTER!

I had originally bought a bag of coconut flakes by a famous company to make coconut milk. Meanwhile I bought a case of this Edward & Sons Trading Co Coconut Flakes. I ran out of the first package a couple weeks ago. Since then, I've make a quart of milk with these coconut flakes. What a difference. I couldn't stop snacking on the flakes while making the milk! The milk came out creamy and tasted of FRESH coconut. Another plus is that the coconut is organic. I highly recommend these Edward & Sons coconut flakes. I will be using them in recipes calling for shredded coconut as well as I'll just process the flakes in my food processer. Yep, these flakes are that good. Try them, I wager you will be happy with them. I will be stocking this brand from now on. Love these flakes.

I love this product. Searching for unsweetened coconut was a hard chore. So many of them are sweetened and I didn't want that. I have used it in baking, making coconut milk, coconut cream and coconut flour. The bags are the perfect size for my use as they are smaller and I don't have to open one and let it sit in my freezer forever getting stale. The tastes is all coconut and I like the smaller pieces because it makes the milk easier to blend and my resulting four much more fine. And I looked everywhere and this price can't be beat.
I would have bought the big commercial sized bag, if Icould find someone to share with...LOL
Just dont raise the price Amazon.
