Our olive oil is produced at source in the Kolymvari Estates of Crete, Greece, where the olives go beyond a simple agricultural product to being a key ingredient in the life, culture and cuisine of the region. With each passing year, perfect climate and soil conditions, in the Island of Crete, allow the olive trees to bear precious olive fruit.
The olive fruit is harvested by hand and sent directly to state of the art milling and processing facilities for same day cold pressing and bottling. Low temperatures are applied to preserve the traditional flavor and quality of the olive oil.

COLD EXTRACTED | PRESSED OLIVE OIL
Your Ellora Farms Extra Virgin Olive Oils are cold extracted (better than pressed) with the flesh and pit of the olive separated from the oil by gravity. Olive oil that’s first cold extracted maintains the most antioxidants and therefore it offers the greatest health benefits to you. First cold pressed – cold extraction. Many oils are marketed as first cold pressed or cold extraction. "Cold" refers to the fact that no heat is added during extraction. "Pressed" refers to the concept that the olives are crushed in a mill to extract the oil. In today’s world the word Cold Press is obsolete as it is not longer the method of choice which was used centuries ago.
If there are no presses involved, why is extra-virgin olive oil still sometimes called "cold pressed"? Cold-pressed is a marketing term that has no regulated definition. According to the International Olive Council, all extra-virgin olive oils are extracted at temperatures under 27ºC (80.6ºF). So by definition all extra-virgin olive oils are "cold-pressed" or "cold extracted".

PDO is a European Union definition. PDO products are linked to the concept of terroir - a sense of place discernible in the flavor of the food. PDO products must be produced, processed, and prepared in a specific region using traditional production methods. The raw materials must also be from the defined area whose name the product bears. The quality or characteristics of the product must be due essentially or exclusively to its place or origin, i.e., climate, the nature of the soil and local know-how.
The Protected Designation of Origin products are subject to very strict inspection process and subsequently certified by the E.U as to its quality and designation of origin. Know your EVOO
Our mill and bottling plant are certified for oil production and are proudly a plasticizer-free and carbon neutral factory. A plasticizer is a substance (typically a solvent) added to a synthetic resin to promote plasticity, flexibility, and reduce brittleness. In many factories around the world, plasticizers can be found in plastic tubes and equipment; however, medical research has shown plasticizers to be highly carcinogenic.
No plastic materials ever come in contact with our olive oil as it could contaminate the oil. We recommend to our consumers that they never purchase olive oil in plastic containers.

Fake or Real ?
But how can you tell if your olive oil is fake or not? Does the fridge test really work? What about the oil lamp test? The North American Olive Oil Association called the home test “completely false and misleading.” Almost any oil will solidify at cold temperatures, depending on its chemical compounds, and even within the EVOO category, factors such as origin, olive variety and time of harvest, will affect solidification.
Even an EVOO that has been adulterated with a bit of canola oil will solidify in the refrigerator and pass the test, even though it is not pure EVOO.
