Encha Founder, Dr. Li Gong (Stanford, Ph.D., 2001), discovered our organic matcha farm on his research journey searching for organic green tea farms in Japan.

Our farmer in Japan switched to organic farming in 1987 and has 30 years of experience farming the best matcha organically.

Encha Organic Matcha Plants Shaded for about 3 Weeks before Harvest

One unique farming technique for Encha Organic Matcha is to shade the green tea plants for about 3 weeks before harvest.

It is shading that makes the plant grown more mentally calming theanine

It is the unique combination of mentally calming theanine + moderate caffeine in Encha that
helps create the experience of calm energy without jitter and longer mental focus without crash.

That is what we call Zenergy!

About 12% of the content in Encha Organic Matcha powder is the powerful antioxidant Catechins. That is a very high amount in a natural plant product. Its antioxidant properties might help prevent diseases, slow aging, reduce UV damage and acne, stimulate metabolism, and enhance overall immunity.

Not all matcha plants, even in Japan, are grown with the same soil quality, shading or organic farming techniques.

 

Encha Organic Matcha Leaves Ground into Fine Powder after Removal of Stems

Another unique technique in making Encha Organic Matcha is to remove the stems of the leaves before grinding.

Traditionally, workers painstakingly removed the stems by hand. Nowadays, it is much easier, making pure organic matcha affordable.

First, the fresh leaves are steamed dry on the day of harvest to prevent oxidation.
Then, leaves are cut into smaller pieces and blown by air onto a two-deck conveyor belt. Lighter pure leaves are blown onto the upper deck. The heavier stems settle to the lower deck.
Afterwards, we manually pick out any remaining stems from the pure leaves.

Finally, we grind the pure leaves into super-fine Encha Organic Matcha powder. 

Encha Farmer and Founder carefully evaluate all high-quality leaves from each harvest. The most tender leaves of each spring are used for Ceremonial-grade Encha. The standard high-quality leaves of each spring are used for Latte-grade Encha. The best leaves of 2nd harvest (late June) are used for Culinary-grade Encha.

Care Instructions: To avoid matcha powder puffing out, tap the Encha packet before opening or closing. Gently pinch the air out and then seal tightly to close. This will help minimize air and moisture to prevent oxidation. Encha packet is very thick and blocks light well. Store your Encha packet in the refrigerator or in a dry, cool, dark place.
