Epicurean understands the relationship between the products we manufacture and the environment we all live in. Epicurean is dedicated to creating long-lasting products that are manufactured with sustainable manufacturing practices and made from environmentally conscientious materials like recycled paper, plastic, and FSC certified papers. Epicurean products are fabricated using materials that gain their natural look and texture from the organic contents that comprise them. Each color is composed of a set of fiber sources layered together and pressed along with a food safe resin to form a sheet that has unequaled food preparation properties.
In 2003 Epicurean was founded by custom skate park manufacturer TrueRide as a way to repurpose excess skating surface material used by the company. The founders of TrueRide knew of the history of the surface material in commercial kitchens, so creating a line of home food prep surfaces from scrap was as natural as, well, skating on it. They knew the wood fiber composite used in skate park ramps was durable, non-porous, and dishwasher safe. It had been used in commercial kitchens for years. TrueRide skate parks last for years outdoors with extensive abuse from both weather and skaters, so you can be sure your Epicurean product can handle even the hardest working kitchen. Today, Epicurean cutting boards, kitchen tools, and utensils are at the center of everyday life for both casual cooks and seasoned gourmets. Liver, papaya, and red beets, for example, may leave a mark. To remove stubborn stains, try a non-abrasive household cleaner.

Because of this peel's durability and versatility, I recommend it highly for the home cook.
It is easy to make pizza on these and with a little semolina under the dough, they slide right off and onto our pizza stone. It’s also great for getting pizza off the grill, too. We also cutting pizzas right on the peel. We now have 2 so we can rotate between cooking and serving.
The only reason I deducted a star is because the size says 23” long as compared to the others which say 21.5”. This one is in fact 21.5”. I was looking for one with a slightly longer handle but the description doesn’t match the actual product and the price was a few dollars more than the other 21.5” peels. Had I known, I would have just ordered the 21.5” option.
- We stretch the dough, and place it immediately on this peel on a piece of parchment paper. the 18X12 is a wee bit smaller than the stone we have, I measure out the parchment a bit bigger than the peel, and stretch it about an inch or two bigger on each side).
-Hubby then takes the peel and places it (parchment paper and all), right onto the stone.
-After a couple of minutes (enough time for the dough to set up), he tugs out the paper.
-After it is looking beautifully bronze and bubbly, he uses the peel to take it out of the oven.
-Transfers to a wire rack to keep the crust crispy
-After it is cool you can transfer back to the peel to cut if you wish
-Place back on the rack if you want to keep it crispy!
We love the beveled edge on this peel, it grabs the pizza on the stone quickly, cleanly, and smoothly. So much so that we didn't want to mess with the wooden peel we had before. We just purchased a second Epicurean peel in the 21 X 14 and it is the perfect size and will handle all the stretching I want to do. The peel looks great, washes easily, and most importantly does the job better than any other. If you are in the market, you won't go wrong with this peel!
