The Crimson Series 8-inch Chef or Cook's knife features a polished hollow ground blade with a precision sharp edge for smooth easy cuts of all food. The chef's knife was originally used primarily to slice and disjoint large cuts of beef, but through the years it has become the work horse of the kitchen and is now a general utility knife. The knife tip has a specially designed angle to increase strength and blade durability; while the smooth tapered bolster provides a comfort pinch grip. The Ergo Chef handle is custom crafted from G10 fiberglass composite material for superior durability that surpasses all other plastic composites. Blades are made from a single piece of high-carbon, German stainless steel (X50CrMoV15) and have a polished finish for stain resistance. Blade edge is ground to a razor-sharp 16-degrees. Hand wash with warm soapy water and dry immediately. The Ergo Chef line is the brainchild of a Johnson and Wales trained chef. The chef was sidelined with painful tendonitis and carpal tunnel syndrome and was desperate to find knives and tools that would eliminate hand and wrist pain. The chef turned inventor enlisted the help of his engineer brother. They worked with designers at the family machining company to examine how a conventional knife fits in a chef's hand, the movement of the chef's wrist and hand during chopping and the angle at which the knife hits the cutting board. The innovative design that was eventually developed took stress off the wrist and hand. After only a few weeks the chef's tendonitis disappeared. Countless prototypes were sent to professional chefs, students and culinary professors across the country. The enthusiastic and positive response gave birth to the Ergo Chef brand.
