Erythritol is a sugar substitute also referred to as a sugar alcohol. The sugar alcohols are counted as carbohydrates in the nutrition label. Their caloric effect on the body is lower than that of a normal carb which is why it has zero calories.
For every 1 tsp (4g) there are 4 grams of carbohydrates and zero sugars. Being a sugar alcohol, Erythritol does not affect blood sugar making it suitable for a low-carb diet! Even though there are 4 grams of carbohydrates in erythritol you would subtract them from the total carb count because they are just ingested and then excreted by our bodies. Our bodies simply cannot metabolize it or use it for energy.
Anthony’s Erythritol is Gluten Free and Non-GMO, with no other additives. This natural sweetener is 70% as sweet as table sugar without the calories. For those people questioning the use of erythritol because of it's 'cooling' properties... a little hint is to measure out the amount you need for your baking and then put it in a high speed blender and blend til it's a fine powder. It pretty much eliminates the cooling or crystals effect in your cooking.
I am a super taster. I basically can't eat a lot of stuff because I can taste every damn nasty flavor out there. I was really afraid to buy this because I didn't want to get the nasty after-flavor of most alternative sweeteners... but... I was surprised when I ate a spoonful of pure Erythritol.
It tastes just like sugar (less sweet). There's almost no difference. I am sitting here, 5 minutes later, without any nasty after taste appearing. It's delicious. I am a sugar addict in every way, so to have something that is safe to eat and not going to hurt me with insulin spikes is wonderful.
If you had any doubt over the negative reviews, don't. They are full of crap. This stuff is GOOD. I need to bake with it to see how well that goes, but as far as TASTE, it's sugar. If you gave me a spoon and didn't tell me, I'd say "it's less sweet but tastes good!"
2 cups erythritol to 1 tbsp stevia powder
Enough sweetner tk last me 6ish weeks with lots of coffee and protein shakes and baking... much more economical for me and u can add more stevia or less depending on ur taste! Want or need a powdered sugar? Put some in a coffee grinder and voila!
Need brown sugar? Add a bit of blackstrap molasses and mix... as dd just a bit at a time until u get color , taste, and consistany u want.

I've tried a lot of different brands of eythritol. Anthony's may be the best. It has a pure taste that lacks the corn-iness found in some corn-based sugar alcohol products. The crystals are uniform, don't clump, and the product is manufactured in the USA (more and more erythritol is coming from China, so good for this brand).
The five-pound bag is a great price for a well-made, good-tasting product. Zero complaints. This is my new standard. Just get it!
