About the Author
Jolinda Hackett (Santa Barbara, CA) has been vegetarian for nearly twenty years, and a plant-based vegan for nearly ten. As a volunteer for countless vegan advocacy groups, Hackett spent several years promoting the myriad benefits of a plant-based diet. She continues to counsel new vegetarians and vegans online as the About.com Guide to Vegetarian Food. While at the University of Chicago, she studied with Dr. Gideon Eshel, who made headlines in 2006 with research showing that a vegan diet does more to reduce one's individual planetary footprint than switching from an SUV to a hybrid vehicle. She has been interviewed by and appeared in American Vegan magazine, Food and Home Magazine, the Daily Nexus, the Santa Barbara News Press, the Jerusalem Post, and on WZRD radio in Chicago.

Also, most of these meals are very plain--plainer than I'd expected, so I'm disappointed. This does not make me want to go vegan, yet I'd been so excited about trying this lifestyle. Another problem is the high sodium level in many of the meals. 1200 mg of sodium in one meal--wow! The addition of nutritional yeast as a topping on a number of meals does not appeal to me either. I am not pleased with this book, and now I have to undergo the hassle of returning it.
Update: I have increased my rating to 4 stars and changed my title from "a little disappointed" to "useful book." Sometimes you need longer experience with a cookbook to judge its usefulness. I have tried several other recipes from this book and found them to be very good: Baked Macaroni and Cheese, Baked Sweet Potato Fries (this is my go-to recipe), Potato and Leek Soup, Udon Noodle Buddha Bowl, Dairy-free Ranch Dressing (another go-to recipe) to name a few. I have many vegan cookbooks and, since I purchased this one a couple years ago, it has gradually taken its place as a good resource. I'm glad it is part of my collection.
The book arrived in excellent condition!
The Everything Vegan Cookbook goes against all this. The majority of recipes are inexpensive and each recipe contains the minimal amount of steps. Another thing I enjoy about this cookbook is most meals can be completed in 30 minutes or less and taste amazing. This is now my preferred cookbook in the kitchen.
Side note: I bought the Kindle Edition and recommend it, my wife loved this book so much she bought a hard copy for herself.
