About the Author
With a multicultural heritage, both Indo-Pakistani and Tanzanian, Aliya LeeKong is passionate about bringing exotic spices, ingredients, and traditions into American cooking. Trained in classical French technique, she spent years in a number of culturally diverse kitchens in and around New York City, ranging from triple Michelin-starred restaurants to tiny, ethnic spots, and has travelled to more than thirty-five countries in the past ten years, learning from international home cooks and chefs alike. Even as my eating habits evolve and change over time, I would cherish this book for the spice mixes and ideas (which I can adapt to physique-friendly recipes). This book is so good that even my mother bought it after enjoying Aliya's recipes so much. I love the focus on spices, and the way this cookbook preserves flavours and techniques from the world over. I really wish Aliya would write another cookbook, but until then, I'll keep enjoying this one (and her blog, which is also outstanding).
Love that there are tasty dishes that I can add to my normal daily rotation (kale salad with pomegranate vinaigrette) as well as for grander occasions (espresso-chipotle spare ribs).
The complex flavor profiles of each dish has impressed all of my dinner guests! Leekong's practical instructions, together with her keen knowledge and innovative use of unique ingredients make following a recipe simple- and so delicious!!
Exotic Table has become a staple for me and I look forward to bringing exotic into every day.
