So, not gonna lie, I bought this at Costco, not Amazon, but had to write a review. I was a little skeptical about how good a black bean pasta could be, but it really honestly tastes like "normal" pasta and has a very similar consistency too. I just threw some pasta sauce on it and it was delicious. I wouldn't fret too much about the bad reviews here - a handful are from the super nitpicky "I only eat grass" folks and one is based on a dang tarot card reading. Really?

Give this pasta a shot. It's pretty tasty and has to be better for you than a belly full of white carbs.

I've eaten so low carb for so many years that I don't miss nor seek pasta type foods at all, as a rule. My husband likes them now and then, so I experiment. This stuff isn't bitter and gritty like a lot of soy pasta (from the nutrient data, I think this product should be labeled "black soybean" not "black bean" pasta). I'm a diet controlled diabetic shooting for under 120 at one hour after meals. I had a sizable serving of this with home made white clam sauce and my blood sugar was only 106 at one hour, came down to mid 90s by 90 minutes.

I highly recommend this product. I have been a big fan of the mung bean pasta by EA, but wanted a change. These are unbelievably delish! The fiber and protein is what stands out most. I am a vegan and gluten free so this meets my nutritional needs and more. I like them without any sauce just a hint of EVOO, parsley and garlic, I can eat them daily and never get bored.

I am writing this review specifically for people that have to follow a low-carb diet because of Diabetes.

I have Gestational diabetes, and was told by a dietician that I can only eat 45 grams of net carbohydrates per main meal, so that it would not cause my blood sugar level to spike too high. I am extremely careful with my net carb intake, and I have a blood glucose meter I use, testing my blood before each meal and 1 hour after my main meal.

When I saw this product carried by Costco, I was amazed the box said one serving size ( approx. 1.5 cups cooked) was equal to 5 net carbohydrates! For example, one cup of cooked quinoa, rice, potatoes, or pasta equals 45 grams of net carbohydrates. I thought this was too good to be true.

I cooked it up tonight with 1 cup of tomato sauce mixed with chicken and mushrooms. After eating the full serving size, I was super full. But, I was worried the nutritional information on the box was inaccurate and maybe my blood sugar level was going through the roof. 1 hour after my dinner, I tested my blood sugar level and was shocked, it was 5.1 mmol/L or 91.8 mg/dl. Never, has my blood sugar levels been so good an hour after a main meal ( normally it's around 6.4 mmol/L or 122 mg/dl).

I was so excited that I knew I had to post this review right away for other people out there that have to monitor their blood sugar levels!

To be completely honest, I don't love the texture of this pasta, which is why I'm only giving it 4 stars. However, if you miss eating a large plate of pasta that would typically be served in a restaurant, then this is great alternative. You can eat a lot more and it won't cause a blood sugar spike. I don't like Shirataki noodles, so this one is a much better substitute in my opinion.

These noodles are easy to make and have a ton of fiber. If you are diabetic like I am, they are great way to have pasta and not worry about too many carbohydrates. When you subtract the fiber from the carbohydrates in one serving, it is almost carb free! There are some natural consequences for eating "bean" pasta. Just keep you car windows rolled down the next day.

This product is a great alternative to wheat pasta, IF you need to watch your carbs. Don't expect it to taste like wheat pasta or have the same texture, because it's made from beans so is different. But if you're a pasta lover who has been avoiding it due to carb content, this is a very acceptable replacement. We've had it w/tomato-based sauces, pestos & olive oil/garlic and it's delicious w/all. It's also gluten free, although we buy it because of the low-carb, high-fiber content. It's not nearly as low-carb as the Shirataki pastas, but is about a thousand times better texture-wise--i.e., not rubbery & much more like a "real" pasta. If you want a gluten-free pasta & aren't concerned with carbs, there are other options that are more like wheat pasta in taste and texture. But for those watching their carbs, this is a wonderful find. I boil it about half the amt. of time suggested on the pkg., as I find it too spongy if cooked longer & we like it al dente. It's more fragile than wheat pasta, so it arrives a bit broken up after going through the shipping process. Amazon's price is the best I've found, less than Whole Foods, our local health-food store, or other online options. Our local Costco sometimes has the 2 lb. boxes of Explore Asian edamame spaghetti--which is a bit higher in carbs but still not bad--at a great price. But if you want the black bean or soybean pastas, Amazon seems to win out, price-wise. I agree w/a previous reviewer's suggestion to buy only one bag to try first, in case you hate it. The black bean variety seems to have a slightly more earthy flavor than the soy or edamame versions, but all are basically mild-tasting. Haven't yet tried the mung bean/edamame mix or azuki bean versions.
