Used these to make a first-ever homemade wedding cake for a family member (a 6"-8"-10" stack). These are lightweight, attractive, sturdy pans, the cake baked evenly and the cake came out easily (but we lined these with parchment paper rounds Regency Wraps Parchment Paper Circles - 8" which did NOT fit the 8" cake pan perfectly for some reason. We had to trim these. Plus we cut the 8" parchment paper circles to fit the 6" cake pans). These clean easily, however
DO NOT PUT THEM IN THE DISHWASHER LIKE WE DID!!! (Instructions below in case you did)
We thought we ruined them, but it turns out it's more a hassle than anything -- the pans aren't ruined and you shouldn't throw them away. They ended up chalky and discolored with a weird texture to them. I uploaded a pic of the cake AND a pic of the Before & After of putting them through the dishwasher and then following the instructions below to season and clean them (the one on the left has yet to be dealt with, the one on the right went through the dishwasher but is now basically back to brand new). I'll let the manufacturer speak for itself here (copied from their website):
"We occasionally receive a call from a customer (or their significant ‘non-baking’ other) with a slightly discolored pan from a phosphate laced journey through the dishwasher. Discolorations may be dark random patterns, smudges, or white chalky spots. Don’t worry and don’t throw the pan away as it still has a lifetime of baking performance ahead! Try first, seasoning the pan with a few drops of good quality baking oil and a cloth. This works well for removing most phosphate residue. For extreme discoloration you may need to coat the entire pan in shortening or butter and place on a cookie sheet. Bake the pan at 300 degrees for 10 minutes. Let the pan cool for a few minutes. While still warm, wipe the pan clean with a towel. This process may not return the ‘off-the-shelf ’ beauty it once had, but will effectively ‘season’ the pan for future use."
I picked up two Fat Daddio's pans after reading the numerous reviews praising them. I will simply add my voice to the din. They are light, very attractive and, most importantly, do an excellent job at baking. 9 inches is an optimal diameter, but also you really need to have at least a 2 inch height for the rim so the cake doesn't overflow while baking. My cake came out superb and the pans were easy to clean. Fat Daddio's is just an awesome name for a pan manufacturer too. I plan to get far more Fat Daddio's pans for future baking.
