I have been a professional baker for almost 30 years, owned my own bakery and a couple of restaurants, this is by far the best cheesecake pan I have ever used, it heats evenly, and provides a beautiful product. wish I had these years ago, been using for a couple of years now, in my restaurant, I make all my own desserts and rolls, Kaisers and French bread, I have never had any issues with this pan, it is tough, gets thrown around by the dishwashers and still holds there shape, they haven't even been able to break a latch on one of these.
Once caveat, THIS IS NOT WATER TIGHT. Before baking I submerged it in water to test and water does leak through seal, no way batter or anything thicker than water would get through but water definitely does so you still need to use large foil sheets or plastic wrap to make sure it stays out of direct water contact.
One of the two pans has a dent on it, thogh a faint one, and the coating has chipped off on the same pan, on the outer side. I have pictures of it, but I don't know how to upload them.
But I besides these defects, thes are as good as the earlier ones that I own.

In 2011, I had ordered two of the 9" pans for my small, home based baking business. Now, I just placed and order for two of the 10" pans.
These pans are brilliant.

These will last me for more than one lifetime, lol. Am dead sure of that.
Just go ahead and buy these. Worth every penny. You won't regret it a bit.
