Handsome, clear, but a struggle to find recipes to try

This is a very handsomely produced book with impressive photos of the food (the grains of rice distinctly separate in the mountainous presentations), beautiful paintings from older times, and interesting anecdotes and stories. I have tried two of the recipes - one rice dish (with meat) and one Koresh (stew). But it is hard to find a recipe you can make without planning ahead since a large number require ingredients that you probably don't have on your shelves (like rose petals or rose water), ingredients you have not even heard of (like jujubes), or are seasonal (pomegranate). If you have a middle eastern (or better still Persian) grocery nearby, this may not be an impediment. The recipes are clear and easy to follow. I have never washed rice so much, at the start and during its cooking. But if you want those separate grains ......
